This quick and flavorful 20-Minute Egg Roll Bowl combines ground chicken, crunchy cole slaw, and scrambled eggs in a savory stir-fry seasoned with hoisin and soy sauce. It’s a tasty, lighter take on classic egg rolls, served as a bowl for a simple and satisfying meal perfect for busy weeknights.

  • Total Time: 20 minutes
  • Yield: 2 servings

Ingredients

Protein

  • 1 pound ground chicken
  • 3 large eggs (whisked)

Vegetables & Aromatics

  • 4 scallions (thinly sliced, separate white and green parts)
  • 3 large cloves garlic (minced)
  • 1 (14-ounce) bag cole slaw
  • 1 tablespoon grated or minced fresh ginger

Sauces & Oils

  • 2 tablespoons neutral oil (divided, such as vegetable or canola)
  • 2 tablespoons hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1/2 teaspoon toasted sesame oil

Seasonings & Garnish

  • Fine sea salt and freshly-ground black pepper (to taste)
  • Furikake seasoning or toasted sesame seeds (for garnish)

Optional

  • Rice or noodles (for serving)

Instructions

  1. Cook the chicken: Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Add the ground chicken and season with fine sea salt and freshly ground black pepper. Cook the chicken until it is browned and crumbled, breaking it up with a wooden spoon as it cooks. Once fully cooked, transfer the chicken to a clean bowl and set aside.
  2. Cook the cole slaw and aromatics: Add the remaining tablespoon of oil to the same skillet. Stir in the white parts of the scallions, minced garlic, and grated ginger. Sauté for about 1 minute while stirring constantly until fragrant. Add the cole slaw to the skillet and sauté for 2 minutes, stirring occasionally, until slightly wilted.
  3. Scramble the eggs: Push the cole slaw mixture to one side of the pan. Pour the whisked eggs into the other side. Cook the eggs, breaking them up into small pieces with a spatula, until fully scrambled and cooked through.
  4. Combine all ingredients: Return the cooked ground chicken to the skillet. Add hoisin sauce, low-sodium soy sauce, toasted sesame oil, and the green parts of the scallions. Toss everything together until the ingredients are evenly combined. Taste and adjust seasoning by adding more hoisin or soy sauce if desired.
  5. Serve: Serve the egg roll bowl warm over rice or noodles, if using. Sprinkle with furikake seasoning or toasted sesame seeds for extra flavor and texture. Enjoy immediately.

Notes

  • For a lower-carb version, serve the bowl without rice or noodles.
  • Feel free to substitute ground chicken with ground turkey or pork.
  • Adjust the amount of hoisin and soy sauce to your taste preferences.
  • If you prefer more heat, add a dash of chili flakes or sriracha.
  • Furikake seasoning adds a nice umami crunch, but toasted sesame seeds are a great alternative.
