Ingredients
Sauce and Marinade
- 1/3 cup honey
- 1/4 cup reduced sodium soy sauce
- 2 garlic cloves, minced (or 1 teaspoon jarred minced garlic)
- 1 teaspoon minced fresh ginger (optional)
Shrimp and Cooking
- 1 lb medium uncooked shrimp, peeled & deveined
- 2 teaspoons olive oil
- Chopped green onion for garnish (optional)
Instructions
- Prepare the Sauce: Whisk together honey, soy sauce, garlic, and ginger (if using) in a medium bowl. This mixture will be split into two halves: one for marinating the shrimp and the other for cooking them.
- Marinate the Shrimp: Place the shrimp in a large sealable container or zipped-top bag. Pour half of the marinade over the shrimp, shake or stir to coat thoroughly, and refrigerate for 15 minutes up to 8-12 hours. Keep the remaining marinade covered in the fridge for cooking later. (Tip: While shrimp marinate, cook your sides like broccoli and brown rice.)
- Cook the Shrimp: Heat olive oil in a skillet over medium-high heat. Add the shrimp in a single layer, discarding the marinade used for marinating. Cook the shrimp on one side until pink, about 45 seconds. Flip shrimp over, add the reserved marinade, and cook until shrimp are cooked through, 1-2 more minutes, allowing the sauce to cook down and coat the shrimp.
- Serve: Plate the shrimp with the cooked sauce poured over. Garnish with chopped green onion if desired. Serve alongside steamed vegetables and brown rice for a balanced meal.
Notes
- Special Tools: Glass mixing bowls and a skillet are ideal for preparing and cooking this dish.
- To thicken the sauce, mix 1 teaspoon cornstarch with 1 teaspoon warm water, then stir into the cooking marinade before adding to the shrimp.
- If using fresh garlic, use 2 cloves minced; for jarred minced garlic, 1 teaspoon is sufficient.
- You may leave shrimp tails on or remove them according to preference.
- Frozen shrimp can be used but should be thawed before marinating and cooking; if using frozen cooked shrimp, simply thaw before reheating in the sauce.
- Discard the marinade used for marinating to avoid contamination; only the reserved marinade is cooked with the shrimp.
