These 3-Ingredient Nutty Banana Cookies are a simple, wholesome treat made with ripe bananas, creamy almond butter, and mixed nuts. Sweetened naturally and optionally enhanced with chocolate chips and cinnamon, these cookies are easy to prepare and perfect for a healthy snack or dessert.

  • Total Time: 25 minutes
  • Yield: 20 cookies

Ingredients

Primary Ingredients

  • 3 bananas (1 ½ cups, mashed)
  • ½ cup creamy almond butter (well-stirred)
  • 2 cups mixed raw nuts

Additional Ingredients

  • ½ cup chocolate chips (optional)
  • ½ tsp ground cinnamon
  • Pinch sea salt

Instructions

  1. Preheat Oven: Preheat the oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Chop Nuts: Transfer the mixed raw nuts to a food processor and pulse until they are roughly chopped. Alternatively, chop the nuts by hand using a knife and cutting board if no food processor is available.
  3. Mash Bananas: In a mixing bowl, mash the ripe bananas until creamy but leaving some small chunks for texture.
  4. Combine Ingredients: Stir the creamy almond butter into the mashed bananas until well-combined, then add the chopped nuts and mix thoroughly.
  5. Add Mix-ins: If using, fold in the chocolate chips along with the ground cinnamon and a pinch of sea salt, stirring until a thick, sticky dough forms. The dough will be gooey and will not resemble traditional cookie dough, which is normal.
  6. Form Cookies: Use a spoon to drop mounds of dough onto the prepared baking sheet. Shape the dough into round cookie shapes since they won't spread during baking.
  7. Bake Cookies: Place the baking sheet on the center rack and bake for 10 to 17 minutes. Bake smaller cookies for 10 to 12 minutes and larger ones for 15 to 17 minutes, or until golden-brown and set.
  8. Cool Cookies: Remove the cookies from the oven and let them cool on the baking sheet for 20 minutes before serving, which allows them to firm up.

Notes

  • The cookie dough is very sticky and will not spread while baking, so shape cookies before baking.
  • Chopping nuts finely will provide a better texture, but feel free to adjust chunk size per preference.
  • Chocolate chips are optional and add sweetness; omit for a nutty, dairy-free version.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • These cookies are naturally gluten-free, vegan, and do not contain added sugars.
