  • 1 large cucumber, (cut into matchsticks)
  • 1/2 cup homemade hummus
  • 3 cups raw snap peas
  • 32 strawberries
  • 1 cup raw almonds

Instructions

  1. Prep the Grains and Beans: In a deep pot, combine brown rice, sea salt, and low sodium chicken broth. Bring to boil over high heat, then reduce to medium, cover, and simmer 25-30 minutes until tender. For quinoa, combine uncooked quinoa, sea salt, and chicken broth, bring to boil, reduce to medium-high, cover and simmer 20 minutes until liquid is absorbed; fluff and cool. For lentils, place dry lentils and water in a large saucepan, bring to boil, cover, simmer 15-20 minutes until tender, then drain and set aside.
  2. Prepare Healthy Beef with Broccoli: Heat olive oil in skillet over medium-high heat. Brown thinly sliced flank steak about 6-8 minutes, remove and set aside. In the same pan, sauté minced garlic, chopped shallot, and green onions for 1 minute. Add broccoli florets and cook 5 minutes until bright green and mostly tender. Make sauce by mixing low sodium soy sauce, coconut sugar, fresh minced ginger, crushed red pepper flakes, then stir in arrowroot starch and water until smooth. Add sauce to pan, cook 3-5 minutes until thickened. Return beef, stir and cook 2-3 minutes. Set aside to cool slightly.
  3. Make Chicken Cauliflower Fried Rice: Heat sesame oil in large pan over medium-high heat. Season chicken breasts with sea salt and pepper, cook 4-6 minutes per side until done. Remove, dice and set aside. In same pan, cook diced carrots until mostly tender, add soy sauce, peanut butter, and chili paste; stir to combine. Add frozen edamame, minced garlic, sliced green onions, cook until heated. Grate cauliflower to rice size and add to pan, cook until tender. Return diced chicken to pan, stir. Push mixture aside, scramble eggs in empty space, then combine with rice mixture. Remove from heat and set aside.
  4. Prepare Lemon Roasted Salmon with Asparagus: Preheat oven to 375°F. Line rimmed baking sheet with foil. Arrange salmon fillets in center, asparagus around edges. Place thin lemon slices over salmon and asparagus. Mix olive oil, lemon juice, minced garlic, sea salt, and pepper; pour over salmon and asparagus. Sprinkle parmesan over top (if using). Bake 10 minutes, then broil 5-7 minutes until cooked and lightly browned. Remove and set aside.
  5. Make Quinoa and Kale Salad: Whisk lemon juice, lemon zest, raw honey, dijon mustard, sea salt, black pepper, and olive oil to make dressing. Place kale in large bowl, drizzle with 1 tbsp olive oil and massage until kale softens. Combine cooked quinoa, lentils, kale, garbanzo beans, diced cucumber, carrot, grape tomatoes, red onion, and sunflower seeds in bowl. Toss with dressing and mix well.
  6. Prepare Chocolate Peanut Butter Overnight Oats: Blend bananas, dark cocoa powder, peanut butter, vanilla extract, and almond milk until smooth. Stir in rolled oats without blending. Divide into four jars, seal, and refrigerate at least 4-6 hours or overnight. Serve cold or warmed, optionally topped with dark chocolate chunks.
  7. Make Mango Green Smoothie: Portion mango chunks, banana, and baby spinach into freezer bags or jars for storage. When ready, blend with flaxseed meal, vanilla protein powder (optional), and unsweetened almond milk until smooth.
  8. Prepare Snacks: For four days, pack raw almonds with fresh strawberries in jars or bags. For three days, pack carrot and cucumber sticks with about 2 tbsp hummus in jars for dipping.
  9. Meal Packing: Pack beef with broccoli alongside steamed brown rice, topping with green onions for four dinners (~500 calories per meal). Pack chicken cauliflower fried rice with fresh snap peas for three lunches (~400 calories per meal). For salmon meals, layer asparagus in containers topped with salmon fillets; quinoa may be added if extra calories are needed.
