Ingredients
Chicken and Seasoning
- 2 chicken breasts
- 1/4 tsp garlic powder
- 1/4 tsp oregano
- 1/4 tsp onion powder
- Pinch of red pepper flakes
- Pinch of salt
- Pinch of black pepper
- 2 tbsp olive oil
Filling and Toppings
- 1 cup marinara sauce
- 1 ball fresh mozzarella
- Pepperoni slices (amount to preference)
- Fresh basil for garnish
Instructions
- Preheat the air fryer: Preheat your air fryer to 400°F (204°C) for 5 minutes to ensure even cooking.
- Prepare the chicken: Slice each chicken breast 3/4 of the way through lengthwise to create a pocket or butterfly without cutting completely through.
- Season the chicken: Rub both sides of the chicken breasts with olive oil and season with garlic powder, oregano, onion powder, red pepper flakes, salt, and black pepper.
- Stuff the chicken: Open the chicken breasts and spread marinara sauce inside. Layer fresh mozzarella slices and pepperoni inside, then close the chicken breasts. No toothpicks are necessary if secured properly.
- First air fry: Place the stuffed chicken breasts in the air fryer basket in a single layer and cook at 400°F for 13 minutes.
- Add toppings and continue cooking: Remove the chicken, spoon additional marinara sauce and place mozzarella on top of each breast. Return to the air fryer and cook for another 3-5 minutes until the cheese has melted fully.
- Serve: Garnish with fresh basil leaves and serve hot for a cheesy, flavorful dish.
Notes
- Ensure the chicken breasts are similar in size for even cooking.
- If your air fryer basket is small, cook the chicken in batches to avoid overcrowding.
- You can add extra veggies like bell peppers or mushrooms inside the chicken if desired.
- Use toothpicks if your chicken does not stay closed while cooking.
- Leftovers can be refrigerated and enjoyed within 2 days.
