Vegetable Mixture
- 2 tablespoons finely chopped onions

- 2 tablespoons cilantro leaves
- 1 teaspoon finely chopped green chilies
- 2 tablespoons grated coconut
- 1/2 teaspoon sugar
Instructions
- Prepare Vegetable Mixture: In a mixing bowl, combine the finely chopped onions, grated carrots, cilantro leaves, green chilies, grated coconut, and sugar. Mix them thoroughly to integrate the flavors.
- Mix Dry Ingredients: Add the rice flour and salt to the vegetable mixture along with 2 teaspoons of oil. Stir well to combine all the dry and wet ingredients uniformly.
- Knead Dough: Gradually add warm water to the mixture and knead it into a soft, moist dough. The dough should be pliable and moist enough to spread without cracking.
- Prepare Banana Leaf: Take a large piece of banana leaf and apply oil generously over its surface to prevent sticking and aid in spreading the dough.
- Shape the Roti: Take an orange-sized portion of dough and place it on the oiled banana leaf. Using wet fingers, pat and spread the dough into a thin or thick circle as desired. For thicker rotis, poke some holes in the dough to allow even cooking.
- Heat Tava: Preheat a tava or flat griddle over medium heat. Once hot, spread a little oil on the surface to prevent sticking.
- Cook with Banana Leaf: Place the banana leaf with the dough onto the hot tava. Let the dough cook for about a minute until partially set.
- Remove Banana Leaf: Carefully peel off the banana leaf from the roti, ensuring it doesn't tear.
- Flip and Cook: Gently flip the roti directly on the tava and cook until both sides are golden brown and cooked through, adding oil as needed.
- Serve: Serve the hot Akki Roti with your choice of side dish such as chutney or curry for a delicious meal.

- Banana leaves can be substituted with parchment paper if unavailable.
- Use warm water to achieve soft dough texture necessary for spreading.
- Wet your fingers with water to avoid dough sticking while shaping.
- Adjust the thickness of the roti to preference; thinner rotis cook faster and are crispier, thicker ones are softer.
