Ingredients
For the Cake
- 3 cups (360 g) all-purpose flour
- 2 tsp (5 g) ground cinnamon
- 1/4 tsp (1 g) nutmeg
- 1 tsp (5.6 g) salt
- 1 1/2 tbsp (21 g) baking powder
- 1 1/2 cups (300 g) granulated sugar
- 1/2 cup (110 g) brown sugar
- 1 cup (224 g) vegetable oil
- 3 eggs, at room temperature
- 1 cup (250 g) unsweetened applesauce, at room temperature
- 1 cup (248 g) apple cider juice (not vinegar), at room temperature
- 1 tsp (5.6 g) vanilla extract
For the Cinnamon Sugar Coating
- 1/4 cup (56 g) unsalted butter, melted
- 1/4 cup (50 g) granulated sugar
- 2 tsp (5 g) cinnamon
Instructions
- Preheat and Prepare Pan: Preheat your oven to 325 degrees F. Spray a bundt pan with non-stick spray and dust with flour to ensure the cake releases easily after baking. Set aside.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, ground cinnamon, nutmeg, salt, and baking powder until well combined. Set aside.
- Cream Sugars and Oil: In a large mixing bowl, combine granulated sugar, brown sugar, and vegetable oil. Mix on medium speed until fully combined.
- Add Eggs: Add the eggs to the sugar and oil mixture and beat on medium speed for about two minutes to incorporate air and create a smooth texture.
- Incorporate Applesauce and Vanilla: Mix in the unsweetened applesauce and vanilla extract until fully combined.
- Alternate Adding Dry Ingredients and Apple Cider: With the mixer on low speed, gradually add one-third of the flour mixture, followed by half of the apple cider juice. Continue alternating the flour mixture and apple cider, finishing with the flour mixture. Mix until no streaks of flour remain, careful not to overmix. The batter will be slightly thin.
- Bake: Pour the batter into the prepared bundt pan and bake for 50 minutes. Check doneness by inserting a toothpick into the center; it should come out with a few moist crumbs.
- Cool Cake: Allow the cake to cool in the pan for one hour before carefully turning it out onto a cake plate or cooling rack.
- Butter Coating: Using a pastry brush, coat the entire cake with the melted unsalted butter to prepare for the sugar coating.
- Apply Cinnamon Sugar: Mix the granulated sugar and cinnamon. Sprinkle the cinnamon sugar mixture evenly over the buttered top and sides of the cake. For the sides, use your hand to gently pat the mixture onto the cake to ensure good adhesion.

- Make sure all wet ingredients are at room temperature to achieve the best texture.
- Do not overmix the batter once you start alternating the dry ingredients and apple cider to keep the cake tender.
- Cooling the cake in the pan ensures it doesn’t break apart when removed.
