Vegetables & Fruit
- 2 cups sliced carrots (about 2 large carrots)
- 2 cups sliced sweet potatoes, halved and quartered (about 2 smaller sweet potatoes)
- 2 cups diced apple (about 2 apples)
Meat
- 2 lbs ground lean turkey
Pantry & Spices
- 1 tablespoon olive oil
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 teaspoons salt, divided
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons rubbed sage, divided
- 1/2 teaspoon cinnamon
- A sprinkle of nutmeg
- 3 tablespoons tomato paste
- 2 teaspoons chili powder
- 3 cups crushed tomatoes
- 2 cups strained tomatoes or marinara sauce
- 1-2 cans kidney beans (optional)
Instructions
- Heat Oil and Sauté Vegetables: Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the diced apples, sliced sweet potatoes, and sliced carrots to the pot. Season with 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, 1/2 teaspoon pepper, 1 teaspoon rubbed sage, 1/2 teaspoon cinnamon, and a sprinkle of nutmeg. Stir occasionally and cook for about 5 minutes until the vegetables start to soften.
- Cook Ground Turkey: Add the ground lean turkey to the pot, breaking it up into smaller pieces with a spatula. Cook for 5 to 7 minutes or until the turkey is fully cooked and no longer pink.
- Add Tomato Paste and Spices: Stir in 3 tablespoons of tomato paste, 2 teaspoons chili powder, 1/2 teaspoon rubbed sage, and the remaining 1 teaspoon salt. Mix well to evenly coat the meat and vegetables with the tomato paste and spices.
- Add Tomatoes and Simmer: Pour in the 3 cups crushed tomatoes and 2 cups strained tomatoes or marinara sauce. Stir to combine all ingredients thoroughly. Reduce heat to low-medium and let the chili simmer gently for 20 to 30 minutes to develop flavors and cook the vegetables through.
- Add Kidney Beans (if using): If you are including kidney beans, add them near the end of the cooking time and heat through for an additional 5 minutes before serving.
Notes
- Slice and quarter the sweet potatoes thinly to ensure they cook through evenly within the cooking time.
- If strained tomatoes are unavailable, marinara sauce can be used as a substitute.
- For a thinner chili consistency, add 1/2 cup to 1 cup of chicken broth or bone broth.
- Increase chili powder by 1 teaspoon if you prefer a spicier chili.
