Apples and Caramel
- 4 large apples
- 65g butter
- 65g brown sugar
- 65g white sugar
- 1 tsp vanilla essence
- ½ tsp cinnamon

- 1 sheet puff pastry
Instructions
- Preheat Oven: Preheat your oven to 210°C (fan bake) to ensure it reaches the perfect temperature for baking the tart.
- Prepare Apples: Peel and quarter the apples, removing the cores carefully to prepare them for caramelizing.
- Sauté Apples: Melt the butter in a frying pan over medium heat and sauté the apples for 5 minutes to start softening them.
- Add Sugars and Spices: Add the brown sugar, white sugar, vanilla essence, and cinnamon to the pan. Simmer for 10 minutes, stirring occasionally, being cautious as the sugar mixture becomes very hot and starts to caramelize.
- Arrange Apples: Line a round cake tin with baking paper. Arrange the caramelized apples in the base of the tin in an attractive pattern and pour the remaining caramel sauce over the apples.
- Add Puff Pastry: Cut a circle from the puff pastry sheet to fit the tin. Lay it over the apples and tuck the edges down around the sides inside the tin.
- Bake the Tart: Bake in the preheated oven for about 30 minutes or until the pastry is puffed up and golden brown.
- Cool and Invert: Remove the tart from the oven and let it cool for 10 minutes. Then carefully flip the tart onto a serving plate and peel off the baking paper.
- Serve: Slice the tart and serve warm, ideally accompanied by whipped cream or vanilla ice cream for added richness.
Notes
- Be cautious when simmering the sugar and butter mixture as it can become extremely hot and may burn easily.
- Use firm apples such as Granny Smith or Braeburn to maintain shape during cooking.
- Allow the tart to cool slightly before flipping to avoid burning yourself with hot caramel.
- The puff pastry can be brushed with a bit of egg wash for a shinier finish if desired.
- Serve immediately after inverting for best texture and flavor.
