This easy Asparagus Goat Cheese Frittata is a tangy, fluffy, and creamy dish perfect for breakfast, brunch, or lunch. Made with fresh asparagus, cherry tomatoes, goat cheese, and basil, this quick recipe can be prepared in under 30 minutes. It’s a versatile, protein-packed meal that can easily be customized with your favorite vegetables or leftovers.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

Egg Mixture

  • 8 eggs
  • 2 tablespoons heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Vegetables and Cheese

  • 1 tablespoon olive oil
  • 1 bunch asparagus, trimmed and cut into 1/4-inch pieces
  • 1 cup cherry tomatoes, halved
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup fresh basil, roughly chopped (or 1 teaspoon dried)

Instructions

  1. Preheat the broiler: Turn on your oven’s broiler to get it ready for finishing the frittata with a golden top.
  2. Whisk the eggs: In a medium bowl, combine 8 eggs, 2 tablespoons heavy cream, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well blended. Set aside.
  3. Heat the skillet: Place a large non-stick ovenproof skillet over medium heat.
  4. Cook asparagus: Add 1 tablespoon olive oil to the skillet. When the oil shimmers (about 1-2 minutes), add the trimmed and chopped asparagus. Sauté for 2-3 minutes until asparagus becomes crisp-tender.
  5. Pour in egg mixture: Increase heat to medium-high and pour the egg mixture into the skillet. Let it cook until eggs begin to set, approximately 2-3 minutes.
  6. Add tomatoes, goat cheese, and basil: Sprinkle 1 cup halved cherry tomatoes, 1/2 cup crumbled goat cheese, and 1/4 cup roughly chopped fresh basil evenly over the eggs. Reduce heat to medium-low and cook until the bottom feels set but the top remains slightly runny, about 2 minutes.
  7. Broil the frittata: Transfer the skillet to the oven under the broiler. Broil for about 5 minutes or until the top is golden-brown and fully set.
  8. Cool and serve: Let the frittata cool for 5 minutes. Loosen the edges with a rubber spatula, slide onto a serving plate, and serve immediately.
  9. Store leftovers: Place any leftover frittata in an airtight container and refrigerate for up to 4 days.

Notes

  • You can customize this frittata with other vegetables such as bell peppers, spinach, or mushrooms.
  • Use a well-seasoned, ovenproof non-stick skillet to prevent sticking and ensure even cooking.
  • If you don’t have an oven broiler, you can finish cooking the frittata in a preheated 375°F (190°C) oven for 8-10 minutes instead.
  • For a dairy-free option, substitute heavy cream with coconut cream and goat cheese with a plant-based cheese.
  • This frittata can be served warm or at room temperature and pairs well with fresh greens or crusty bread.
