Delicious baked apples filled with a warm, spiced oat and nut mixture, perfect as a cozy dessert or wholesome snack. These baked apples are tender and naturally sweetened, complemented by the crunch of nuts and the richness of coconut oil, making a comforting treat ideal for cooler days.

  • Total Time: 1 hour 5 minutes
  • Yield: 4 servings

Ingredients

Apples

  • 4 medium gala apples or 6 small ones, cored and/or halved
  • 1/4 cup (60 ml) hot water

Filling

  • ½ cup + 1 tablespoon (50 gr) rolled oats
  • 1/3 cup (65 gr) coconut sugar
  • 1 tablespoon maple syrup plus more for serving
  • 1 teaspoon (15 ml) vanilla extract
  • 1 teaspoon cinnamon
  • ¼ cup (30 gr) chopped walnuts or pecans
  • 2 tablespoons (30 gr) firm coconut oil
  • ½ teaspoon pumpkin spice (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon ground nutmeg

For Serving

  • A few tablespoons soy yogurt per baked apple (optional)
  • A scoop of vegan vanilla ice cream per baked apple (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the apples evenly.
  2. Prepare Apples: Rinse and core the apples carefully, avoiding cutting through them completely. You can either halve the apples and scoop out the centers with a spoon or use an apple corer or melon baller. This creates a cavity for the filling.
  3. Mix Filling: In a medium bowl, combine rolled oats, chopped nuts, coconut sugar, maple syrup, coconut oil, vanilla extract, salt, cinnamon, nutmeg, and optional pumpkin spice. Mix until the mixture becomes sticky and slightly moist; add 2 tablespoons of water if needed to help it bind.
  4. Fill Apples: Spoon the oat and nut mixture into the cavity of each prepared apple evenly.
  5. Prepare for Baking: Place the stuffed apples in a baking dish or cast iron pan. Pour the hot water around the apples in the dish to keep them moist during baking.
  6. Bake: Bake the apples at 350°F (180°C) for about 50 minutes. After 30 minutes, carefully spoon the liquid from the dish over the apples to prevent drying out. The apples should be tender and the filling should be browned but the apples should not fall apart.
  7. Serve: Drizzle a bit of maple syrup over the baked apples before serving. Serve warm as is or topped with a few tablespoons of soy yogurt or a scoop of vegan vanilla ice cream for extra indulgence.

Notes

  • The filling can be adjusted according to preference—try different nuts or add raisins for extra sweetness.
  • If the filling mixture is too dry, add water a tablespoon at a time to achieve the right consistency.
  • Use firm apples suitable for baking like gala, honeycrisp, or granny smith for best texture.
  • Baking time can vary slightly depending on apple size; test for softness with a fork or skewer.
  • Serve immediately while warm for optimal taste, especially if topping with yogurt or ice cream.
