For the Chicken Coating
- 6 cups cornflakes (use gluten free, if needed)
- 1/4 cup grated parmesan cheese
- 1 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 large eggs, beaten
- 2 tablespoons hot sauce
- 2 pounds chicken breast tenderloins
- Extra virgin olive oil, for drizzling
For the Hot Honey Sauce
- 1/2 cup honey
- 2-3 tablespoons hot sauce
- 1-3 teaspoons cayenne pepper (adjust to taste)
- 3/4 teaspoon chipotle chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Sea salt, to taste
- Fresh thyme, cilantro, or parsley, for serving
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and aid in easy cleanup.
- Prepare Crumbs: In a food processor, pulse the cornflakes, parmesan, smoked paprika, onion powder, garlic powder, and a pinch of sea salt until you achieve fine crumbs. If you don’t have a processor, crush the cornflakes in a ziplock bag by stepping on them and mix with the other dry ingredients. Transfer this seasoned crumb mixture to a shallow bowl.
- Coat the Chicken: In a separate bowl, beat the eggs and mix in 2 tablespoons of hot sauce. Add the chicken breast tenderloins and toss until they are fully coated in the egg mixture.
- Dredge: Dip the hot sauce-coated chicken pieces into the crumb mixture, pressing to fully coat. For a thicker crust, repeat the process by dipping back into the eggs and then into the crumbs again. Place the coated chicken pieces evenly spaced on the prepared baking sheet. Drizzle a little extra virgin olive oil over the chicken to help crisp the coating during baking.
- Bake: Bake the chicken in the preheated oven for 20-25 minutes, turning once halfway through if desired, until the coating is crisp and the chicken is cooked through and no longer pink inside.
- Make Hot Honey Sauce: While the chicken bakes, combine the honey, hot sauce, cayenne pepper, chipotle chili powder, garlic powder, onion powder, and a pinch of sea salt in a small saucepan. Warm over low heat until gently simmering and all ingredients are well combined. Adjust seasoning to taste.
- Serve: When the chicken is done, drizzle the warm hot honey sauce generously over the pieces. Garnish with fresh thyme, cilantro, or parsley for a fresh herbal note. If the sauce thickens too much, simply warm it for about 5 seconds in the microwave before serving. Enjoy immediately for the best texture.
