Baked Feta Eggs is a delicious and easy breakfast dish featuring creamy, melty feta cheese baked with eggs. This hands-off recipe combines scrambled eggs with tangy feta for a unique twist on traditional baked feta dishes. Perfect for serving with pita bread and fresh herbs like basil or mint, it makes a savory and satisfying start to the day.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1 (8-ounce) block feta cheese
  • 12 large eggs
  • 2 tablespoons extra virgin olive oil, plus more for greasing the baking dish
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For Serving

  • Pita pocket
  • Fresh basil and/or mint leaves

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 400°F (200°C). Grease an 8x11 inch ceramic baking dish with a little olive oil to prevent sticking.
  2. Arrange Feta and Eggs: Place the block of feta cheese in the center of the prepared baking dish. Crack all 12 eggs around the feta, evenly distributing them.
  3. Season and Drizzle: Drizzle 2 tablespoons of extra virgin olive oil over the feta and eggs. Sprinkle ¼ teaspoon salt over the eggs, and season both eggs and feta with ¼ teaspoon black pepper.
  4. Bake: Bake in the preheated oven for 18 to 22 minutes, or until the feta is melted and the egg whites around the edges are cooked through but yolks are still slightly soft.
  5. Scramble Together: Remove from the oven and use a fork to gently scramble the eggs and feta together. Some egg whites may still look a bit wet—this is okay as they will finish cooking from residual heat.
  6. Serve: Enjoy the baked feta eggs as is, or scoop into pita pockets and garnish with fresh basil or mint leaves for added flavor and freshness.

Notes

  • Nutrition label is for eggs only and does not include the optional pita bread for serving.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for a few days. Reheat gently in the microwave before serving.
  • Do not overcook to keep the eggs creamy and soft.
  • Adding fresh herbs like basil or mint enhances the dish's flavor profile.
