Baked Feta With Honey is a quick and easy dish that combines the creamy, salty flavor of Greek feta cheese with sweet, caramelized honey. Perfectly baked and broiled for a golden crust, it’s served warm with toasted pita bread and fresh thyme, making it a wonderful appetizer or snack full of contrasting flavors and textures.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Feta and Topping

  • 200 grams (8 oz) Greek feta cheese
  • 1 tablespoon olive oil
  • 2 tablespoons honey

To Serve

  • Fresh thyme sprigs, for sprinkling over the top
  • Toasted pita bread, warm

Instructions

  1. Preheat the oven: Set your oven to 180°C (350-375°F/Gas Mark 4-5) to prepare for baking the feta cheese.
  2. Prepare the feta: Remove the feta from its packaging and, if it’s very wet, pat it dry gently with folded paper towels placed on a chopping board to remove excess moisture.
  3. Apply olive oil: Pour the olive oil over the top of the feta, then use a basting brush or the back of a spoon to evenly spread it over the surface of the cheese. It’s fine if some oil drips down the sides.
  4. Bake the feta: Place the feta in a baking dish on the oven’s middle shelf and bake for 8-10 minutes until it starts to soften slightly.
  5. Switch to grill/broil mode: After baking, set your oven to grill/broil at 200°C (392°F) and move the oven rack to the top position, preparing for caramelization.
  6. Add honey and broil: Drizzle the honey over the top of the baked feta, then spread it gently with a brush or spoon. Return the baking dish to the oven and grill (broil) the feta for 5-6 minutes until the honey caramelizes and the top is golden.
  7. Serve: Carefully remove the baking dish using oven mitts and transfer the baked feta to a serving plate using a silicone turner. Sprinkle fresh thyme over the top and surround with warm toasted pita bread for dipping. Provide a cheese knife for easy serving.

Notes

  • Feta cheese: Use Greek-style feta for its firmer texture, ideal for baking. Most blocks range from 180 to 200 grams (about 7 ounces), suitable for this recipe.
  • Olive oil: It's okay if the oil drips down the sides of the cheese; it won’t affect the bake or final dish.
  • Patting dry: Optional step; if your feta is very moist, drying it helps but if it’s not very wet, you can skip this step.
