A flavorful and tender Baked Korean BBQ Chicken recipe featuring boneless skinless chicken thighs marinated in a vibrant mixture of coconut aminos, gochujang, honey, sesame oil, and aromatic ginger and garlic. This dish is baked to juicy perfection, then broiled to achieve a deliciously crispy and caramelized finish, garnished with sesame seeds, green onions, and fresh lime wedges. Perfect for an easy weeknight dinner served with rice and vegetables.

  • Total Time: 35 minutes plus marinating time
  • Yield: 8 servings

Ingredients

Chicken

  • 3 lbs boneless skinless chicken thighs (about 8 to 10 thighs)

Marinade

  • ½ cup coconut aminos
  • 4 Tbsp gochujang
  • 3 Tbsp honey
  • 3 Tbsp toasted sesame oil
  • 2 Tbsp rice vinegar
  • 1 Tbsp fresh ginger (peeled and grated)
  • 3 large cloves garlic (minced)

Garnish

  • Sesame seeds
  • 4 stalks green onion (chopped)
  • 1 to 2 limes (cut into wedges)

Instructions

  1. Prepare the Marinade: In a small bowl, combine coconut aminos, gochujang, honey, toasted sesame oil, rice vinegar, grated fresh ginger, and minced garlic. Stir well until the marinade is smooth and thoroughly mixed.
  2. Marinate the Chicken: Place the chicken thighs into a large zip lock bag or a bowl. Pour the marinade over the chicken, seal the bag or cover the bowl, and move the contents to ensure each piece is well coated. Refrigerate and marinate for at least 20 minutes or up to 12 hours for maximum flavor infusion.
  3. Preheat the Oven: When ready to cook, preheat your oven to 425°F (220°C) to prepare for baking the chicken.
  4. Arrange the Chicken: Transfer both the marinated chicken thighs and all remaining marinade into a large casserole or baking dish. Arrange the chicken in a single layer to ensure even cooking and juice retention.
  5. Bake the Chicken: Place the dish on a rack positioned in the center or just above the center of the oven. Bake the chicken for 12 to 18 minutes, or until an internal temperature of 165°F (74°C) is reached.
  6. Baste with Juices: Remove the chicken from the oven and spoon the cooking juices over the pieces to enhance moisture and flavor.
  7. Broil to Crisp: Set the oven to the high broil setting. Return the chicken to the oven and broil for 5 to 8 minutes until the thighs develop a golden brown, crispy exterior. The ideal internal temperature for best taste and tenderness is between 180°F to 190°F (82°C to 88°C). Use a digital thermometer to check.
  8. Rest and Garnish: Take the chicken out of the oven and let it rest for at least 10 minutes before serving. Garnish with toasted sesame seeds, chopped green onions, and fresh lime wedges. Spoon any remaining pan juices on top. Serve warm with steamed rice and stir-fried vegetables to complete the meal.

Notes

  • Marinate the chicken for at least 20 minutes but up to 12 hours for enhanced flavor.
  • Use a digital thermometer to ensure the chicken is cooked through, reaching 165°F before broiling and 180-190°F for ideal texture.
  • Using a casserole dish with deep sides helps catch juices and simplifies cleanup.
  • Broiling at the end crisps up the chicken skin for a delicious texture contrast.
  • Pair with steamed white or brown rice and stir-fried veggies for a balanced meal.
