Ingredients
Mississippi Chicken
- 1 batch (2 pounds) Mississippi Chicken (prepared and shredded)
Tacos
- 24 street taco size tortillas
- 2 cups shredded cheddar cheese
- Olive oil spray or cooking oil for brushing
Dipping Sauce
- Reserved cooking liquid from Mississippi Chicken
Instructions
- Prepare the Mississippi Chicken: After cooking the Mississippi chicken, shred the meat and set it aside. Reserve the cooking liquid as it will be used later to make the dipping sauce.
- Preheat the Oven: Set your oven to 400 degrees Fahrenheit (204 degrees Celsius) to get ready for baking the tacos.
- Prepare the Tortillas: Lay out all the tortillas on a large baking sheet. Lightly brush or spray the tortillas with olive oil on one side.
- First Bake: Flip the tortillas so the oiled side is down. Evenly distribute the shredded chicken and cheddar cheese onto each tortilla. Place the baking sheet into the oven and bake for 3 minutes to warm the filling and soften the tortillas.
- Form the Tacos: Remove the tortillas from the oven carefully. While still warm, fold each tortilla in half over the filling to form the taco shape. Lightly press down and spray the outside of the tacos with olive oil to help them crisp up.
- Secure the Shape: Place another baking sheet on top of the folded tacos to keep them closed during baking.
- Bake the Tacos: Bake the tacos for an additional 10 minutes to achieve crisp, golden edges and melted cheese inside.
- Make the Dipping Sauce: While the tacos bake, heat the reserved Mississippi chicken cooking liquid over medium heat until it reaches a simmer. Allow it to reduce by half to intensify the flavors, then remove from heat.
- Check Crispness: Remove the top baking sheet and assess the tacos’ crispness. If a crispier texture is desired, bake the tacos uncovered for an extra 5 to 10 minutes.
- Serve: Serve the baked tacos hot, accompanied by the rich, reduced Mississippi chicken dipping sauce for an extra burst of flavor.
Notes
- Be careful when folding the warm tortillas to avoid cracks or breaks.
- If you want extra cheesy tacos, sprinkle additional cheese inside before the final bake.
- The dipping sauce made from the cooking liquid is flavorful and adds a unique moistness to the tacos – don’t skip it!
- You can prepare the Mississippi chicken in an Instant Pot or slow cooker ahead of time for convenience.
- For a gluten-free option, substitute the tortillas with corn tortillas labeled gluten-free.
