Ingredients
Main Ingredients
- 10g butter (for greasing)
- 3 cups milk (750ml)
- 3 Tbsp caster sugar
- 1 tsp vanilla essence
- 1 tsp cinnamon
- ½ tsp ground nutmeg
- 120g short grain rice
Toppings
- Cinnamon (for sprinkling)
- Berry jam (to serve)
- Cream (to serve)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 160°C fan bake. Grease a suitable baking dish thoroughly with 10g of butter to prevent sticking and add flavor.
- Mix Milk and Spices: In a large jug, whisk together 3 cups (750ml) of milk, 3 tablespoons of caster sugar, 1 teaspoon of vanilla essence, 1 teaspoon of cinnamon, and ½ teaspoon of ground nutmeg until well combined.
- Combine Rice and Milk Mixture: Spread 120g of short grain rice evenly in the greased baking dish. Pour over the spiced milk mixture and gently stir to mix the rice with the liquid evenly.
- Bake the Pudding: Place the dish in the preheated oven and bake for 1 hour and 30 minutes. During baking, stir the mixture a couple of times to prevent the rice from sticking to the dish. The pudding is ready when the rice is tender, the mixture is golden on top, and the pudding has set.
- Cool and Thicken: Remove the pudding from the oven and allow it to stand for 5 minutes. This resting time helps the pudding to thicken further.
- Serve: Spoon the warm rice pudding into small bowls. Sprinkle with cinnamon and top each serving with a spoonful of berry jam and a drizzle of cream for added richness and flavor.
Notes
- Short grain rice is preferred for its creamy texture, but you can substitute with Arborio rice if needed.
- Occasional stirring during baking is key to avoid rice sticking at the bottom and to promote even cooking.
- Adjust sugar quantity for sweetness preference or dietary needs.
- Serve warm for the best flavor and texture experience.
- You can also add raisins or chopped nuts before baking for additional texture.
