This Baked Salmon with Avocado Mash is a simple yet gourmet-tasting dinner recipe that combines perfectly seasoned baked salmon fillets with a creamy, zesty avocado mash. Gluten-free, dairy-free, Whole30 compliant, and low-carb, this dish is perfect for a healthy and flavorful weeknight meal.

  • Total Time: 20 minutes
  • Yield: 4 salmon fillets

Ingredients

Salmon

  • 4 salmon fillets
  • Salt and black pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/8 tsp cayenne pepper
  • 1 tbsp extra virgin olive oil

Avocado Mash

  • 2 avocados, mashed
  • 1 lime, zest grated
  • 1 lime, juice squeezed
  • Salt to taste
  • Chopped dill to taste
  • 1/2 red onion, chopped

Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to prepare for baking the salmon. Ensure it's fully preheated before placing the salmon inside.
  2. Season the salmon: Arrange the salmon fillets on a baking dish. Season each fillet evenly with salt, black pepper, garlic powder, paprika, and cayenne pepper. Drizzle or brush 1 tablespoon of extra virgin olive oil over the fillets to keep them moist while baking.
  3. Bake the salmon: Place the baking dish with salmon into the preheated oven and bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  4. Prepare the avocado mash: While the salmon bakes, mash the avocados in a bowl until smooth but still slightly chunky. Add grated lime zest, fresh lime juice, salt, and chopped dill to the mashed avocados. Mix well to combine all flavors.
  5. Assemble and serve: Once the salmon is fully baked, remove from the oven. Spoon the avocado mash generously over each salmon fillet and sprinkle the chopped red onion on top for a fresh, crisp finish. Serve immediately.

Notes

  • Use ripe avocados for the creamiest mash.
  • Adjust cayenne pepper according to your preferred spice level.
  • Fresh lime zest and juice brighten the avocado mash and complement the salmon perfectly.
  • Can be served with a side of steamed vegetables or a fresh salad for a complete meal.
  • Leftover avocado mash can be stored in an airtight container with a little lime juice to prevent browning.
