This baked salmon recipe features fresh salmon fillets topped with a flavorful sun-dried tomato and herb mayonnaise. Ready in just 20 minutes, it's a perfect healthy dinner option blending American and Mediterranean flavors.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Salmon

  • 4 fillets fresh salmon, 6 oz each, center cut, even pieces

Sun-Dried Tomato Mayo Topping

  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup mayonnaise
  • 3-4 garlic cloves (3 if large), minced
  • 1/2 teaspoon dried oregano
  • 2 tablespoons chopped fresh basil, plus extra for garnish
  • Optional: dash red pepper flakes

Seasoning and Oil

  • Extra virgin olive oil
  • Kosher salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to prepare for baking the salmon.
  2. Prepare Sun-Dried Tomato Mayo: In a bowl, combine the chopped sun-dried tomatoes, mayonnaise, minced garlic, dried oregano, chopped fresh basil, and red pepper flakes if using. Mix well to create a flavorful topping.
  3. Prepare Baking Sheet and Salmon: Coat a small baking sheet with a splash of extra virgin olive oil. Place the salmon fillets skin side down on the sheet. Lightly sprinkle each fillet with kosher salt and black pepper.
  4. Apply Topping: Evenly spread the sun-dried tomato mayonnaise mixture over the top of each salmon fillet, covering the surface.
  5. Bake Salmon: Place the baking sheet in the preheated oven and bake the salmon for 15-17 minutes. For fillets about 1 ½ inches thick, 15 minutes is sufficient; cook slightly longer if thicker.
  6. Garnish and Serve: Remove the salmon from the oven and sprinkle with additional freshly chopped basil before serving. Enjoy immediately.
