These Baked Zucchini Prosciutto and Cheese Roll-ups are a delicious, low-carb appetizer featuring thinly sliced zucchini coated in a crispy breadcrumb and Parmesan crust, baked to golden perfection, then rolled with provolone cheese, prosciutto, and fresh basil. Served with Italian tomato basil sauce, this dish offers a savory and elegant treat perfect for entertaining or a light snack.

  • Total Time: 40 minutes
  • Yield: 8 roll-ups

Ingredients

Zucchini Roll-ups

  • 4-6 Zucchini/courgettes, to yield 8 long slices (thinly sliced)
  • ½ cup (60 grams) plain breadcrumbs
  • ¼ cup (10 grams) Parmesan cheese, grated
  • ¼ teaspoon salt
  • Small pinch ground black pepper
  • ⅓ cup (78 ml) olive oil
  • 2-3 slices provolone cheese, or any Italian cheese, cut into pieces
  • 8 slices Prosciutto, cut to the length and width of the zucchini
  • 4 basil leaves, torn into pieces
  • Italian tomato basil sauce, for dipping
  • Toothpicks for securing the rolls

Instructions

  1. Preheat and Prepare Rack: Preheat your oven to 400°F (200°C) and position the oven rack in the upper third. Place a wire rack inside a baking sheet or tray to ensure even heat circulation and crisping of both sides of the zucchini.
  2. Slice Zucchini: Using a mandoline slicer, thinly slice the zucchini about ⅛-inch (4mm) thick, maintaining uniform length for even cooking.
  3. Prepare Breadcrumb Mixture: On a large plate, combine the plain breadcrumbs, grated Parmesan cheese, salt, and ground black pepper. Mix well to evenly distribute seasoning.
  4. Coat Zucchini Slices: Brush both sides of each zucchini slice with olive oil. Then, press each slice into the breadcrumb mixture to coat thoroughly. Lay the coated slices evenly spaced on the wire rack, optionally brushing or sprinkling additional olive oil over them to promote browning.
  5. Bake the Zucchini: Bake in the preheated oven for 20-30 minutes, or until the breadcrumb coating turns golden brown. If more browning is desired, use the broiler/oven grill function for the last few minutes, watching carefully to prevent burning.
  6. Air Fryer Alternative: If using an air fryer, preheat it to 375°F (190°C). Arrange zucchini slices in a single layer and cook for 8 minutes, then flip and cook for an additional 8 minutes or until browned. Work in batches if necessary.
  7. Cool Slightly: Remove the baked zucchini slices and allow them to cool slightly so they are easier to handle for rolling.
  8. Assemble Roll-ups: Starting from the narrow end of each slice, layer pieces of provolone cheese evenly across the slice, then add a slice of prosciutto followed by torn pieces of basil. Roll the slice tightly and secure with a toothpick to hold the roll together.
  9. Serve: Arrange roll-ups on a serving plate and serve with Italian tomato basil sauce for dipping, enhancing the flavors with a tangy complement.

Notes

  • For uniform cooking, ensure zucchini slices are evenly thin and of similar length.
  • If breadcrumbs are not browning sufficiently, broiling briefly helps achieve a crispy golden crust.
  • You can prepare zucchini roll-ups ahead and refrigerate; reheat in the oven before serving for best texture.
  • Prosciutto can be substituted with other thinly sliced cured meats if preferred.
  • Use toothpicks or small skewers to keep rolls secure during serving.
