Ingredients
For the Croissants and Syrup
- 6 croissants
- 1 cup water (250 ml)
- 2 tbsp sugar
- 1 tbsp dark rum (optional)
For the Almond Cream
- 7 tbsp unsalted butter (100 g, cut into small cubes and at room temperature)
- ½ cup granulated sugar (100 g)
- 1 pinch of salt
- 2 eggs (at room temperature)
- 1 cup almond flour (100 g, also called almond meal in the U.S.)
- ¼ tsp almond extract (optional)
- Sliced almonds for topping
- Powdered sugar for dusting
Instructions
- Prepare the syrup: In a small saucepan, combine water, sugar, and dark rum if using. Heat over medium heat, stirring occasionally until the sugar is fully dissolved. Remove from heat and set aside to cool completely.
- Slice the croissants: Carefully slice each croissant lengthwise, similar to cutting a sandwich, to create a top and bottom half without cutting all the way through to keep them connected if preferred.
- Soak croissants with syrup: Using a pastry brush, generously brush the syrup on the inside, outside, and ends of each croissant to infuse flavor and moisture.
- Make almond cream: In a mixing bowl, cream the softened butter, granulated sugar, and a pinch of salt using a spatula or whisk until smooth and uniform in texture.
- Add almond extract and eggs: Stir in the almond extract if using. Then add the eggs one at a time, mixing thoroughly after each addition to incorporate fully.
- Fold in almond flour: Gently fold the almond flour into the mixture until a smooth, spreadable paste forms, ensuring no lumps remain.
- Preheat oven: Heat your oven to 355°F (180°C) if using convection, or 375–390°F (190–200°C) if using a conventional oven. Line a baking sheet with parchment paper to prevent sticking.
- Assemble croissants: Spread a generous layer of prepared almond cream on the bottom half of each croissant. Optionally, use a piping bag for neat application.
- Close and top: Close the tops of the croissants, then place a small dollop of almond cream on top of each. Sprinkle sliced almonds evenly over the cream for added texture and appearance.
- Bake: Place the croissants on the prepared baking sheet and bake for 15–18 minutes, or until the tops are golden brown and the almond cream has set firmly.
- Cool and serve: Allow the croissants to cool slightly, then dust with powdered sugar. Serve warm or at room temperature for the best flavor and texture experience.
Notes
- Use room temperature eggs and butter to help the almond cream mix smoothly and evenly.
- Dark rum in the syrup adds a subtle depth of flavor but can be omitted for a non-alcoholic version.
- Almond flour can be substituted with almond meal if preferred, but ensure it is finely ground for the best texture.
- To store, keep croissants in an airtight container at room temperature for up to two days; reheat slightly before serving.
- Feel free to add more sliced almonds on top for extra crunch.
