Ingredients
Dates
- 14 Medjool dates (pitted or pitted by slicing)
Nut Filling
- ¼ cup chopped walnuts
- ¼ cup chopped pistachios
- 2 tablespoons honey (or maple syrup/agave)
- ½ teaspoon cinnamon
- ½ teaspoon vanilla extract
- 3 tablespoons peanut butter
Chocolate Drizzle
- ¼ cup chocolate chips (for melting)
Instructions
- Prepare the Dates: Using a sharp knife, make a shallow slice down the middle of each date without cutting all the way through. Remove any pits if still present, then gently open each date to create space for the filling.
- Make the Filling: In a small bowl, combine chopped pistachios, chopped walnuts, honey (or chosen syrup), cinnamon, vanilla extract, and peanut butter. Mix thoroughly until the mixture is well combined and all nuts are coated. For a finer texture or smoother paste, pulse the mixture briefly in a food processor.
- Stuff the Dates: Spoon the nut mixture carefully into the center cavity of each prepared date, ensuring the filling is evenly distributed.
- Melt the Chocolate: Place chocolate chips in a microwave-safe bowl and heat in 20-second intervals, stirring between each, until the chocolate is fully melted and smooth.
- Drizzle & Serve: Drizzle the melted chocolate over the stuffed dates evenly. Allow the chocolate to set slightly at room temperature before serving for best presentation and taste.
Notes
- For a smoother filling, use a food processor to blend nuts and peanut butter.
- Maple syrup or agave can be substituted for honey to suit vegan preferences.
- Use dark chocolate chips if you want a richer, less sweet topping.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Great for a quick energy boost or as a healthy dessert alternative.
