Wet Ingredients
- 60g butter, at room temperature
- ¾ cup sugar
- 2 large free-range eggs
- 4 large bananas, roughly mashed (or 5 medium)
Dry Ingredients
- 1¾ cup flour
- 1½ tsp baking powder
- ½ tsp bicarbonate of soda
- ½ tsp salt

- 1 cup blueberries
- 80g dark chocolate, chopped into smallish chunks
Instructions
- Preheat the oven: Preheat your oven to 180°C (350°F) and line a 22 x 12 cm loaf tin with baking paper to prepare for baking.
- Cream butter and sugar: Using an electric mixer, cream together the room temperature butter and sugar until the mixture becomes light and fluffy, which helps incorporate air for a tender crumb.
- Add eggs: Add the eggs one at a time, thoroughly mixing after each addition to ensure even distribution and a smooth batter.
- Incorporate bananas and chocolate: Mix in the roughly mashed bananas and chopped dark chocolate chunks briefly, just until combined to retain texture.
- Combine dry ingredients: Sift together the flour, baking powder, bicarbonate of soda, and salt. Quickly fold the dry ingredients into the wet mixture, being careful not to overmix to keep the bread light.
- Fold in blueberries: Gently stir the blueberries into the batter at the end, mixing just enough to evenly distribute them without breaking the berries.
- Bake the loaf: Pour the batter into the prepared loaf tin and bake in the preheated oven for 60 to 65 minutes, or until a sharp knife inserted into the center comes out clean (note it may have melted chocolate on it).
- Monitor baking: If the banana bread’s top darkens too quickly, loosely cover it with foil halfway through baking to prevent over-browning.
- Cool and serve: Once baked, remove the loaf from the oven, allow it to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Notes
- If the top browns too fast, cover loosely with foil halfway through baking.
- Check the loaf around the 30-minute mark for even baking and to adjust foil coverage.
- For a deeper loaf tin, increase baking time slightly and test doneness carefully.
- The melted chocolate on the skewer when tested is normal and does not indicate undercooking.
