  • ¼ cup unsalted butter (cold and cubed, 56g)
  • 3 to 4 bananas (divided, 600 to 800g)

Pie Crust

  • 1 pie crust (homemade or store-bought)
  • 1 large egg
  • 1 tablespoon heavy cream

Whipped Cream Topping

  • 2 cups heavy whipping cream (480mL)
  • ¼ cup confectioners' sugar (30g)
  • 2 teaspoons vanilla extract

Instructions

  1. Prepare the Filling: In a medium heat-proof bowl, whisk together the whole eggs and egg yolks and set aside. In a medium pot, whisk together sugar, cornstarch, and salt. Gradually add milk while whisking to avoid clumps. Cook over medium-high heat, whisking constantly, until mixture begins to bubble and thicken (about 6 minutes). Remove from heat.
  2. Temper the Eggs: Slowly add about 1 cup of the hot milk mixture to the egg mixture while whisking vigorously to prevent curdling. Pour the tempered eggs back into the pot while whisking continuously. Return pot to medium heat.
  3. Cook the Custard: Whisk constantly as the mixture bubbles again. Continue cooking until thickened such that the whisk leaves a clear trace when lifted, about 6–8 minutes. Remove from heat and stir in butter cubes and vanilla until fully melted and combined. Cover the surface with plastic wrap to prevent a skin from forming and let cool to room temperature (2–3 hours, refrigerate after 30 minutes to speed cooling).
  4. Prepare the Pie Crust: On a lightly floured surface, roll the pie crust into a 13-inch circle. Transfer carefully to a 9-inch pie pan without stretching the dough. Trim excess dough, fold under, and crimp the edges. Prick the bottom with a fork. Chill in the refrigerator for 1 hour or freeze for 30 minutes.
  5. Bake the Pie Crust: Preheat oven to 425°F (220°C). Line crust with foil or parchment and fill with baking beans. Bake for 15–25 minutes until edges are golden and bottom appears dry. Remove foil and beans. Brush crust with a mixture of beaten egg and heavy cream. Cover edges with foil if browning too quickly and bake an additional 10–12 minutes until golden all over.   7. Make the Whipped Cream Topping: Just before serving, beat heavy cream, confectioners' sugar, and vanilla on medium speed until soft peaks form (about 2 minutes). Pipe or dollop the whipped cream over the pie. Optionally chill for another hour. Garnish with the remaining sliced bananas if desired.
