Instructions
- Preheat and Prepare Muffin Tin: Preheat your oven to 425 degrees Fahrenheit and line a muffin tin with muffin liners. Tulip-style liners are recommended for their height and shape.
- Blend Wet Ingredients: Ensure the cooked red lentils are well drained and cooled. In a blender or food processor, combine the lentils, eggs, honey, Greek yogurt, vanilla extract, almond extract, very ripe bananas, cinnamon, baking soda, baking powder, salt, and nutmeg. Blend everything until completely smooth.
- Combine with Flour: Place the whole wheat flour in a large mixing bowl. Pour the blended wet mixture into the bowl and stir until fully combined, creating a smooth batter.
- Add Chocolate Chips: Gently fold in 1 cup of chocolate chips into the batter, leaving some to sprinkle on top if desired.
- Fill Muffin Tin and Bake: Divide the batter evenly among the prepared muffin liners. Sprinkle additional chocolate chips on top if you like. Bake initially at 425°F for 5 minutes to set, then reduce the oven temperature to 350°F and continue baking for another 18-22 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
- Cool and Serve: Allow muffins to cool in the pan for a few minutes before transferring to a wire rack. Enjoy warm or at room temperature.
