Ingredients
Chicken Marinade
- 4 chicken thighs, cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp sake
- 1 tbsp mirin
- 1 tsp sesame oil
- 4 cloves garlic, minced
- 2 tsp ginger, minced
- ½ tsp salt
- ½ tsp white pepper
- 1 egg white, beaten
Coating and Frying
- Potato starch, for coating
- Neutral oil, for deep frying
Bang Bang Sauce
- ½ cup mayonnaise
- ¼ cup + 1 tbsp Thai sweet chili sauce
- 3 tbsp sriracha or other chili sauce
- 1 tbsp lemon juice
Instructions
- Marinate the chicken: In a large bowl, combine the chicken pieces with soy sauce, sake, mirin, sesame oil, minced garlic, minced ginger, white pepper, salt, and beaten egg white. Mix well to ensure all the chicken is coated evenly. Cover and refrigerate for at least 1 hour, or preferably overnight to enhance flavor and tenderness.
- Prepare the Bang Bang sauce: In a separate bowl, mix together mayonnaise, Thai sweet chili sauce, sriracha, and lemon juice until well combined. Set aside to allow the flavors to meld.
- Coat the chicken: Remove the marinated chicken from the fridge. Dredge each piece thoroughly in potato starch to create a light, even coating which will crisp up beautifully when fried.
- Deep fry the chicken: Heat neutral oil in a deep pan or fryer to about 350°F (175°C). Carefully fry the coated chicken pieces in batches for 5 to 6 minutes or until golden brown and crispy on the outside. Use a slotted spoon to transfer the fried chicken onto paper towels to drain excess oil.
- Toss and serve: Place the fried chicken into a large bowl, pour the Bang Bang sauce over, and toss gently until all pieces are evenly coated in the spicy, creamy sauce. Serve immediately over hot steamed rice and garnish with sliced green onions or chives for a fresh touch. Enjoy your flavorful Bang Bang Chicken!
Notes
- Marinating the chicken overnight allows the flavors to fully penetrate the meat for a more tender and flavorful result.
- Potato starch is preferred over flour for a crispier coating when frying.
- Adjust the amount of sriracha and chili sauce in the Bang Bang sauce to control the spiciness level.
- Use a neutral oil with a high smoke point such as vegetable or canola oil for deep frying.
- This dish pairs nicely with steamed jasmine rice or sticky rice for an authentic Asian meal.
