These Banh Mi Turkey Burgers are bursting with vibrant flavors inspired by the classic Vietnamese sandwich. Made with ground turkey and a savory marinade, they're cooked quickly and effortlessly in an air fryer for a juicy, tender result. Topped with tangy pickled carrots and cucumbers, fresh cilantro, and a creamy spicy mayo, these burgers offer a perfect balance of sweet, spicy, and savory in every bite.

  • Total Time: 28 minutes
  • Yield: 4 servings

Ingredients

Burgers

  • 1 lb ground turkey
  • ½ cup green onions, chopped
  • 1 tbsp fish sauce
  • 2 tbsp soy sauce
  • ½ tbsp garlic, minced
  • 1 tbsp sugar
  • ½ - 1 tbsp sriracha (adjust to desired spiciness)
  • Cilantro, for garnish
  • 4 brioche buns

Pickled Veggies

  • 1 cup matchstick carrots
  • 1 cup Persian cucumbers, sliced into matchsticks
  • 1 jalapeno, sliced (seeds removed for less spice)
  • 1 cup white vinegar
  • 1 cup water
  • ½ tsp salt
  • ½ tsp sugar

Spicy Mayo

  • Kewpie mayo
  • Sriracha (to taste)

Instructions

  1. Preheat the Air Fryer: Set your air fryer to 360°F and allow it to preheat for 5 minutes to ensure even cooking of the turkey burgers.
  2. Prepare the Burger Mixture: In a large bowl, combine the ground turkey with chopped green onions, fish sauce, soy sauce, minced garlic, sugar, and sriracha. Mix gently but thoroughly to incorporate all the flavors without overworking the meat.
  3. Form Patties: Divide the mixture into four equal portions and shape each into a patty suitable for your brioche buns.
  4. Cook the Burgers: Place the patties in the preheated air fryer basket and cook at 360°F for 10-13 minutes. Flip the patties halfway through cooking to promote even browning. Use a meat thermometer to ensure the internal temperature reaches 165°F for safe consumption.
  5. Make the Pickled Veggies: While the burgers cook, combine white vinegar, water, salt, and sugar in a saucepan and heat until it just begins to simmer. Place the carrots, cucumbers, and jalapeno slices in a large bowl or jar, then pour the hot pickling liquid over the vegetables. Allow this mixture to cool to room temperature before refrigerating until needed.
  6. Prepare the Spicy Mayo: Mix Kewpie mayonnaise with sriracha to your preferred level of heat, creating a creamy, spicy spread.
  7. Assemble the Burgers: Toast the brioche buns if desired. Spread the spicy mayo on the buns, add the cooked turkey patties, top with a handful of pickled veggies and fresh cilantro. Serve immediately and enjoy the bold, fresh flavors!

Notes

  • You can adjust the amount of sriracha in both the burger mix and the mayo to control the spice level.
  • For less spice, remove jalapeno seeds before pickling or omit the jalapeno entirely.
  • Pickled veggies can be made in advance and stored in the refrigerator for up to a week.
  • Ensure the turkey patties reach a safe internal temperature of 165°F to avoid foodborne illness.
  • Kewpie mayo adds a distinctive creaminess and slight sweetness, but regular mayonnaise can be used as a substitute.
  • Brioche buns work beautifully here for their soft texture and slight sweetness but feel free to use your preferred bun type.
