Ingredients
For the Steak Marinade
- 1 pound flank steak
- 1 tablespoon cornstarch
- 1 tablespoon neutral oil
- 1 tablespoon soy sauce
- 1/4 teaspoon baking soda
For the Sauce
- 1/2 cup beef stock
- 2 tablespoons oyster sauce
- 2 tablespoons Shaoxing wine
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon dark soy sauce
- 1/8 teaspoon white pepper
For Stir-Frying
- 2 tablespoons neutral oil, divided
- 1 (12-ounce) bag broccoli florets
- 4 scallions, sliced into 2-inch pieces
- 1 tablespoon grated or minced fresh ginger
- 4 cloves garlic, grated or minced
- 1/2 teaspoon sesame oil
Instructions
- Marinate the steak: Thinly slice the flank steak across the grain into bite-sized pieces. In a small bowl, whisk together cornstarch, neutral oil, soy sauce, and baking soda until smooth. Toss the steak in this marinade until fully coated. Let it rest for at least 10 minutes and up to 30 minutes to tenderize and flavor the meat.
- Prepare the sauce: In another bowl, combine beef stock, oyster sauce, Shaoxing wine, soy sauce, cornstarch, dark soy sauce, and white pepper. Whisk thoroughly until all ingredients are well incorporated and the cornstarch is dissolved.
- Stir-fry the broccoli: Heat 1 tablespoon of neutral oil in a large sauté pan or wok over medium-high heat. Add the broccoli florets and sauté, stirring occasionally, for 6 to 8 minutes until the broccoli is crisp-tender. Remove the broccoli and set aside on a clean plate.
- Stir-fry the beef: Add the remaining 1 tablespoon of oil to the pan. Spread the marinated beef in an even layer and cook undisturbed for about 1 minute until the bottom side caramelizes. Flip the beef pieces, add the grated ginger and garlic, and stir-fry for another 1-2 minutes until the beef is nearly cooked through.
- Combine ingredients: Carefully add the cooked broccoli, scallions, and prepared sauce into the pan with the beef. Toss everything together to combine evenly. Continue cooking while stirring for 30-60 seconds until the sauce thickens and clings to the beef and broccoli. Remove the pan from heat and stir in the sesame oil.
- Season and serve: Taste the dish and add extra soy sauce if desired for additional saltiness. Serve the beef and broccoli warm over steamed rice or fried rice for a complete meal. Enjoy!
