Ingredients

Beef Marinade and Meat

  • 3 pounds beef chuck roast, sliced into thin quarter inch strips
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 Tablespoons olive oil
  • 2 1/2 teaspoons garlic powder
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 2 Tablespoons fresh lemon juice

For Serving

  • 5 soft pitas
  • 5 lettuce leaves
  • 1 cup cherry tomatoes, halved
  • 1/4 of a red onion, thinly sliced
  • 1 English cucumber, sliced and then halved

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1 clove garlic, finely minced
  • 1 Tablespoon fresh lemon juice
  • 1 Tablespoon olive oil
  • 1 teaspoon red wine vinegar
  • 1 teaspoon dried dill weed
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Tzatziki Sauce: Combine the plain Greek yogurt, minced garlic, fresh lemon juice, olive oil, red wine vinegar, dried dill weed, salt, and freshly ground black pepper in a bowl. Stir well to combine all ingredients thoroughly and refrigerate until ready to serve to allow flavors to meld.
  2. Prepare the Beef for Slow Cooker: Trim any large pieces of fat from the beef chuck roast and slice the meat into thin, quarter-inch strips. Place the beef strips in the bottom of the slow cooker.
  3. Mix the Seasoning for Slow Cooker: In a small bowl, combine olive oil, garlic powder, dried oregano, ground cumin, dried thyme, fresh lemon juice, salt, and pepper. Pour this mixture evenly over the beef in the slow cooker to fully coat the meat.
  4. Cook the Beef in Slow Cooker: Cover and cook on LOW for 6 hours or until the beef is very tender.
  5. Prepare the Beef for Instant Pot: Trim excess fat from the beef roast and slice thinly as for slow cooker. Place the sliced beef into the Instant Pot.
  6. Mix the Seasonings for Instant Pot: In a small bowl, combine 1/3 cup water, olive oil, garlic powder, dried oregano, ground cumin, dried thyme, fresh lemon juice, salt, and pepper. Pour this mixture over the beef in the Instant Pot.
  7. Cook the Beef in Instant Pot: Seal the Instant Pot valve and select the manual or high pressure setting for 30 minutes. Once the timer goes off, let the Instant Pot rest for 15 minutes before carefully releasing any remaining pressure.
  8. Assemble the Gyros: Place a lettuce leaf on a pita bread. Add a portion of the cooked beef on top, followed by cherry tomatoes, cucumber slices, red onion, and a generous dollop of the prepared tzatziki sauce.

Notes

  • Make Ahead Instructions: The tzatziki sauce and sliced vegetables can be prepared ahead of time and stored separately in the refrigerator until serving.
  • Freezing Instructions: The beef strips can be frozen either before or after cooking. It is recommended to freeze the raw beef sliced with the marinade in a freezer-safe bag. Thaw completely in the refrigerator before cooking in the Instant Pot or slow cooker.
