Beef Salpicao is a flavorful Filipino dish featuring tender ribeye steak cubes sautéed with garlic in a savory and slightly spicy soy-Worcestershire sauce marinade. Perfect as a quick and satisfying main course, this recipe brings out rich umami flavors complemented by a slight kick of chili pepper flakes.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Beef

  • 2 pounds ribeye steak, cut into 1-inch cubes
  • Salt and pepper to taste

Marinade

  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons soy sauce
  • 1 teaspoon brown sugar
  • 1/4 teaspoon red chili pepper flakes

Cooking

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 head garlic, peeled and minced

Instructions

  1. Season beef: In a bowl, season the ribeye steak cubes with salt and pepper to taste. Let it marinate for about 10 minutes to allow the seasoning to penetrate the meat.
  2. Prepare marinade: In a small bowl, combine Worcestershire sauce, soy sauce, brown sugar, and red chili pepper flakes. Whisk well until the sugar is fully dissolved. Set aside.
  3. Heat butter and oil: Place a wide, thick-bottomed pan over medium heat. Add butter and olive oil, allowing the butter to melt gently without getting hot.
  4. Brown garlic: Add the minced garlic to the melted butter while stirring regularly. Cook for about 1 minute until the garlic turns lightly golden but not burnt.
  5. Increase heat and sear garlic: Raise the heat to high and continue stirring the garlic to prevent burning. Ensure the pan reaches a hot temperature for searing.
  6. Sear beef: Add the marinated beef cubes to the pan, spreading them evenly. Allow them to sear untouched for 1 to 2 minutes to develop a browned crust, then turn and sear on the other sides.
  7. Add sauce mixture: Pour the prepared sauce mixture over the beef. Continue cooking and stirring regularly for 3 to 5 minutes until the beef is cooked through and coated with the flavorful sauce.
  8. Serve: Remove the beef from the pan. Optionally garnish with chopped green onions and fried garlic bits for added texture and flavor. Serve hot.

Notes

  • Use ribeye steak for a tender and juicy result; other steaks can be used but may vary in tenderness.
  • Do not overcook the beef to avoid toughness; medium-rare to medium is ideal.
  • Adjust chili flakes according to desired spiciness.
  • Frying garlic at medium heat first ensures it browns evenly without burning.
  • Serve with steamed rice or as a main dish alongside vegetables.
