For the Beef Pieces:

- ½ teaspoon salt

- 1 tablespoon olive oil
For the Mushroom Filling:
- 1 tablespoon olive oil
- ½ onion, minced
- 2 cups button mushrooms, finely chopped (about 7 ounces / 200 grams)
- 1 tablespoon regular soy sauce
- Generous pinch of black pepper
- 1 teaspoon dried oregano
- ½ cup pitted black olives (60 grams)
For the Beef Wellington Bites:
- 1 pound puff pastry (450 grams)
- Mustard (to taste)
- 1 small egg, beaten
Instructions
- Prepare the Beef: Cut the beef tenderloin into 1-inch (2.5 cm) pieces and season with salt and black pepper. Heat 1 tablespoon olive oil in a skillet over high heat. Brown half of the beef pieces on all sides for 1-2 minutes. Transfer to a plate lined with paper towels. Repeat with the remaining beef pieces and set aside.
- Make the Mushroom Filling: In the same skillet, heat 1 tablespoon olive oil over medium-low heat. Add the minced onion and chopped mushrooms, sautéing for 10 minutes while stirring occasionally until softened. Add soy sauce, dried oregano, and a generous pinch of black pepper, stirring to combine.
- Process the Filling: Transfer the mushroom mixture to a food processor. Add pitted black olives, ensuring no stones remain. Pulse until the mixture reaches a smooth-ish consistency.
- Assemble the Wellington Bites: Preheat the oven to 400°F (200°C). Unfold or unroll the puff pastry sheet and cut into approximately 3-3.5 inch (8-9 cm) squares. Spread a small amount of mustard in the center of each square, then top with a spoonful of the mushroom filling followed by a piece of browned beef. Fold two opposite corners over the filling and beef, then fold the other two corners, pressing to seal tightly.
- Prepare for Baking: Place each parcel on a baking tray lined with baking parchment. Brush the tops of each pastry parcel with the beaten egg to achieve a golden finish.
- Bake: Bake in the preheated oven for 10-15 minutes, or until the puff pastry is risen and golden brown. Serve warm with your choice of dipping sauce.
