Instructions
- Blind Bake Pie Crust: Blind bake your homemade pie crust according to your crust recipe instructions. Once baked, set it aside to cool completely to ensure the filling does not melt or make the crust soggy.
- Prepare Cannoli Pie Filling: In a large mixing bowl, combine the softened cream cheese, ricotta cheese, heavy cream, powdered sugar, vanilla extract or paste, orange zest, and cinnamon. Beat the mixture thoroughly for about 4-5 minutes until it is smooth, light, and fluffy. Gently fold in the mini chocolate chips to distribute evenly.
- Fill and Chill Pie: After the pie crust has fully cooled, spoon the cannoli filling into the crust and spread evenly. Place the pie in the refrigerator to chill for at least 2 hours to allow the filling to set. To speed up chilling, you can place the pie in the freezer for about 45 minutes.
- Make Chocolate Ganache: In a microwave-safe bowl, combine the semi-sweet chocolate and heavy cream. Heat at 50% power for 45 seconds, then stir. Continue heating in 15-second increments, stirring after each until the chocolate is fully melted and smooth. Pour the ganache over the chilled filling and spread it out evenly. Immediately return the pie to the refrigerator to chill for 1-2 hours until the ganache sets.
- Prepare Whipped Cream: In a mixing bowl, beat the heavy cream until soft peaks form. Add the powdered sugar and continue beating until stiff peaks form, making a stable whipped cream topping.
- Assemble and Garnish: Pipe or spread the whipped cream over the top of the chilled pie. Sprinkle additional mini chocolate chips on top. Garnish with bakery cannolis and pistachios for added texture and traditional presentation.
