Ingredients
Dry Ingredients
- 1 1/2 cups granulated sugar
- 3/4 cup all-purpose flour
- 2/3 cup cocoa powder, sifted if lumpy
- 1/2 cup powdered sugar, sifted if lumpy
- 1/2 cup dark chocolate chips
- 3/4 teaspoons sea salt
Wet Ingredients
- 2 large eggs
- 1/2 cup canola oil or extra-virgin olive oil
- 2 tablespoons water
- 1/2 teaspoon vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat your oven to 325°F. Lightly spray an 8x8 inch baking dish with cooking spray and line it with parchment paper. Spray the parchment paper as well to prevent sticking.
- Combine Dry Ingredients: In a medium bowl, mix together the granulated sugar, all-purpose flour, sifted cocoa powder, sifted powdered sugar, dark chocolate chips, and sea salt until well combined.
- Mix Wet Ingredients: In a large bowl, whisk the eggs, olive oil (or canola oil), water, and vanilla extract until the mixture is smooth and evenly combined.
- Combine Wet and Dry Mixtures: Gradually sprinkle the dry ingredient mixture over the wet ingredients. Stir gently until just combined, being careful not to overmix. The batter will be thick.
- Pour Batter and Smooth: Pour the thick brownie batter into the prepared baking dish. Use a spatula to spread it evenly and smooth the top for even baking.
- Bake: Place the pan in the preheated oven and bake for 40 to 48 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached. It's better to slightly underbake for fudgier brownies.
- Cool Completely: Remove the brownies from the oven and let them cool fully in the pan for about 2 hours to allow the center to set and firm up before slicing.
- Store: Store cooled brownies in an airtight container at room temperature for up to 3 days or freeze for longer storage. For a firmer texture, refrigerate the brownies.
Notes
- If you'd like to reduce the sugar content, you can successfully use 1 cup of granulated sugar instead of 1 1/2 cups.
- The recipe uses olive oil for a subtle flavor pairing with chocolate, but canola oil can be used for a more neutral taste.
- Brownies will be very gooey right out of the oven; allowing them to cool completely (about 2 hours) helps them set properly.
- For a firmer brownie, consider storing them in the refrigerator.
- Using an 8x8 baking dish is important to avoid overcooking; a 9x9 dish is not recommended.
