Ingredients
For the Sandwich
- 8 slices rye bread
- 4 Tbsp. butter, softened
- 1/4 cup Russian dressing
- 8 slices Swiss cheese
- 3/4 lb. corned beef
- 1 cup sauerkraut
For the Russian Dressing
- 1/2 cup mayonnaise
- 3 Tbsp. ketchup
- 2 Tbsp. horseradish
- 2 tsp. Worcestershire sauce
- 1 Tbsp. granulated sugar
- 1/4 tsp. paprika
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Make Russian Dressing: In a medium bowl, whisk together mayonnaise, ketchup, horseradish, Worcestershire sauce, sugar, and paprika until smooth and combined. Season with kosher salt and freshly ground black pepper to taste.
- Prepare Sandwiches: Butter one side of each slice of rye bread. On the non-buttered side, spread about 1 tablespoon of the prepared Russian dressing. On four slices, layer Swiss cheese, corned beef, and sauerkraut evenly.
- Assemble Sandwiches: Top each of the prepared slices with the remaining bread slices, dressing side down, to form sandwiches.
- Cook Sandwiches: Heat a medium skillet over medium heat. Place one sandwich in the skillet and cook for about 3 minutes per side, or until the bread is golden brown and the cheese is melted. Repeat with remaining sandwiches.
Notes
- For best results, drain sauerkraut well to avoid soggy sandwiches.
- You can make the Russian dressing ahead and store it in the fridge for up to a week.
- Use rye bread for authentic flavor; however, pumpernickel is a great substitute if preferred.
- Serve with a pickle and kettle-cooked chips for a classic deli experience.
