- 4 sweet potatoes
- 1 tbsp olive oil or avocado oil
Black Bean Medley
- 1 can (400 ml) black beans, strained and rinsed (or 1 1/2 cups cooked black beans)
- 1 cup cherry tomatoes, chopped
- 1/2 cup corn
- 1/3 cup cilantro, chopped, tightly packed
- 1/4 cup red onion, diced
- 1 clove garlic, diced
- 1/2 lime, juiced
- 2 tsp olive oil
- 1/4 tsp sea salt
- Pinch pepper
- Pinch chili flakes
Easy Guacamole (for topping)
- 1 avocado
- 2 tsp lime juice
- Pinch sea salt
Vegan Sour Cream (to drizzle)
- 1/3 cup coconut yogurt
- 1/2 tsp lime juice
- Pinch sea salt
Instructions
- Prepare Sweet Potatoes: Preheat your oven to 400°F (200°C). Using a fork, poke small holes all around the sweet potatoes about an inch apart to allow steam to escape. Line a baking tray with parchment paper and lightly coat the sweet potatoes with olive or avocado oil. Bake them for 40 minutes to 1 hour, depending on size, until a fork inserted easily slides through the flesh.
- Make Black Bean Medley: In a mixing bowl, combine rinsed black beans, chopped cherry tomatoes, corn, cilantro, red onion, and diced garlic. Drizzle with lime juice and olive oil, then season with sea salt, pepper, and chili flakes. Mix thoroughly to combine all flavors.
- Prepare Easy Guacamole: In a separate bowl, mash the avocado with lime juice and a pinch of sea salt until creamy and smooth, perfect for topping the stuffed sweet potatoes.
- Make Vegan Sour Cream: In another small bowl, stir together the coconut yogurt, lime juice, and sea salt to create a tangy drizzle to finish the dish.
- Assemble and Serve: Once the sweet potatoes are baked and tender, cut them in half lengthwise. Stuff each half generously with the black bean mixture, top with a dollop of easy guacamole, and drizzle the vegan sour cream over. Serve warm as a satisfying main or side dish.
Notes
- The baking time for sweet potatoes varies based on size. Smaller potatoes take about 40 minutes, while larger ones require up to 1 hour. Test doneness by inserting a toothpick; it should pass through easily.
