Pie Crust
- 1 recipe Perfect Pie Crust
Cream Cheese Filling
- 8 ounces cream cheese, softened
- 2 Tbsp fresh basil, chopped
- 1/8 tsp fresh lemon zest
- 2 Tbsp sugar
- pinch salt
Fruit Topping
- 12 ounces fresh blackberries
Egg Wash and Sugar Topping
- 1 egg white, lightly beaten
- 1 Tbsp turbinado sugar
Lemon Whipped Cream
- 1 cup whipping cream
- 1/4 tsp fresh lemon zest
- 2 tsp sugar
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the galette.
- Make Cream Cheese Mixture: In a medium bowl, combine the softened cream cheese with chopped fresh basil, 1/8 teaspoon fresh lemon zest, and 2 tablespoons of sugar. Mix until smooth and set aside.
- Roll Out Pie Crust: On a lightly floured surface, roll out the perfect pie crust recipe into a round disc about 1/8 to 1/4 inch thick. Carefully transfer the dough to a baking sheet that has been lightly sprayed with cooking oil.
- Assemble Galette: Spread the cream cheese mixture evenly over the pie crust, leaving approximately a 1-inch margin around the edges. Next, layer the fresh blackberries evenly on top of the cream cheese layer.
- Fold Edges: Fold the 1-inch edge of the pie crust inward around the filling, pleating as needed to create the rustic galette shape. Brush the folded crust edge with the lightly beaten egg white, then sprinkle the turbinado sugar over the crust for added sweetness and crunch.
- Bake: Place the galette in the preheated oven and bake at 375°F for 45 minutes, or until the crust is golden brown and fully cooked.
- Prepare Lemon Whipped Cream: While baking, use a cold mixing bowl to whip the whipping cream along with 1/4 teaspoon fresh lemon zest and 2 teaspoons sugar until soft peaks form. Keep chilled until serving.
- Serve: Once the galette is baked and cooled slightly, serve it topped with a generous spoonful of the lemon whipped cream for a refreshing, creamy complement to the sweet berries and basil.
Notes
- Ensure the cream cheese is softened to room temperature for easier mixing.
- Use fresh, ripe blackberries for the best flavor and juiciness.
- Chill the bowl and whisk before whipping cream to help it whip up faster and hold its shape longer.
- Turbinado sugar gives a nice crunch and subtle molasses flavor to the crust edge.
- This galette is best enjoyed the day it’s made but can be stored refrigerated loosely covered and gently warmed before serving.
- You can substitute basil with mint or thyme for a different herbal twist.
