Ingredients
Crust:
- 1 sleeve graham crackers (9 crackers)
- 1 cup pecans
- 1/2 cup butter, melted
- 2 tablespoons sugar
Filling:
- 1 package (8 oz) cream cheese, well softened
- 1 cup powdered sugar
- 2 tubs (8 oz each) whipped topping, divided
- 2 cans (21 oz each) blueberry pie filling
Garnish:
- Chopped pecans, for garnish (optional)
Instructions
- Prepare the crust: Preheat your oven to 350°F (175°C). In a food processor, blend the graham crackers and pecans until they are finely chopped to form your crust base.
- Mix and bake crust: Stir in the melted butter and sugar into the graham cracker and pecan mixture until well combined. Press this mixture firmly into the bottom of a 13x9 inch baking pan. Bake in the preheated oven for 8 minutes, then remove and allow it to cool completely.
- Make cream cheese mixture: In a large bowl, beat the softened cream cheese and powdered sugar together until the mixture is smooth and creamy without lumps.
- Add whipped topping: Take one container of whipped topping and beat about 1 cup of it into the cream cheese mixture to ensure the mixture is lump-free and smooth.
- Fold in remaining whipped topping: Gently fold the remaining whipped topping from that container into the cream cheese mixture for a light, fluffy texture. Then, spread this cream cheese mixture evenly over the cooled crust.
- Add blueberry topping: Pour the blueberry pie filling over the cream cheese layer, spreading it out evenly for full coverage.
- Top with whipped topping: Spread the remaining container of whipped topping evenly over the blueberry layer, creating a smooth top layer.
- Garnish and chill: If desired, sprinkle chopped pecans over the top for added texture and flavor. Cover the dish and chill in the refrigerator for at least 2 hours or preferably overnight to allow the dessert to set and flavors to meld.
Notes
- For best results, make sure the cream cheese is very soft before mixing to avoid lumps.
- Allowing the crust to cool completely before adding the filling prevents it from becoming soggy.
- This dessert can be prepared a day ahead and stored covered in the fridge.
- Chilling overnight helps the dessert firm up and enhances flavor blending.
- Optional garnish with chopped pecans adds a nice crunch and nutty flavor.
