Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease or spray a donut pan with non-stick cooking spray to ensure easy donut removal.
- Mix Dry Ingredients: In a large bowl, whisk together the cake flour, salt, and baking powder until well combined for a light and airy texture.
- Combine Lemon Zest and Sugar: In a small bowl, rub the lemon zest into the granulated sugar with your fingers until the sugar feels slightly moist and fragrant. Stir this lemon-sugar mixture into the dry ingredients.
- Mix Wet Ingredients: In a seperate small bowl, whisk together the buttermilk, melted and cooled butter, egg, and vanilla extract. Pour these wet ingredients into the dry mixture and gently fold using a rubber spatula just until combined.
- Coat Blueberries: Toss the blueberries with 1 tablespoon of cake flour to prevent them from sinking in the batter, then gently fold them into the batter evenly.
- Fill Donut Pan: Transfer the batter into a piping bag or a large plastic bag with the corner cut off wide enough for blueberries to pass. Pipe the batter evenly into the prepared donut pan placed on a baking sheet.
- Bake: Bake the donuts in the preheated oven for 14 to 18 minutes, until a toothpick inserted into the donuts comes out clean and the tops are lightly golden.
- Cool: Remove the donut pan from the oven and allow the donuts to cool completely on a wire rack before glazing.
- Prepare Lemon Glaze: Whisk powdered sugar and lemon juice together until smooth. Add milk a little at a time to achieve a thick but pourable consistency.
- Prepare Blueberry Glaze: Whisk powdered sugar and blueberry jam together until combined. Add milk as needed to reach a thick yet flowing consistency.
- Glaze Donuts: Once donuts are fully cooled, drizzle with either the lemon glaze or blueberry glaze to finish.

- Make sure the melted butter is cooled before adding to the batter to avoid cooking the egg.
- Tossing blueberries in flour prevents them from sinking to the bottom during baking.
