Blueberry Compote
- 2 cups fresh blueberries (1 dry pint)
- 1/3 cup granulated sugar (2.9 ounces)
- 2 teaspoons lemon juice
Whipped Cream Mixture
- 1 1/2 cups heavy whipping cream (12 ounces)
- 3/4 cup whole milk Greek yogurt (6 ounces)
- 1/3 cup powdered sugar (1.4 ounces)
- 1/2 teaspoon vanilla extract
Instructions
- Make the Blueberry Compote: In a saucepan over medium-high heat, combine the blueberries, granulated sugar, and lemon juice. Cook until the mixture bubbles, then reduce the heat to medium. Continue cooking until the blueberries collapse and the mixture thickens slightly, about 10 minutes.
- Prepare the Compote: Remove the pan from heat. Smash the blueberries with a spoon or potato masher. If desired, remove about 1/3 cup of the mixture to use as a topping for serving.
- Strain the Compote (Optional): For a smoother texture, push the remaining compote through a colander or sieve to remove solids. Discard the solids. Place the compote in the refrigerator or freezer to cool completely and thicken slightly.
- Whip the Cream and Yogurt: In a large bowl, beat together the heavy whipping cream, Greek yogurt, powdered sugar, and vanilla extract. Beat on high speed for about 5 minutes until the mixture forms stiff peaks. If the compote is not fully cooled, cover the whipped mixture and refrigerate until ready to combine.
- Fold Together: Gently fold the cooled blueberry compote into the whipped cream and yogurt mixture to create a marbled effect without losing the lightness.
- Serve: Spoon or dollop the blueberry fool carefully into glass or dessert dishes for an attractive presentation. If you reserved compote earlier, add a dollop on top for extra flavor and decoration.
Notes
- You can adjust the sweetness by varying the amount of granulated and powdered sugar.
- Cooling the compote thoroughly before folding it into the cream prevents the whipped cream from deflating.
- If you prefer a chunkier texture, skip straining the compote.
- This dessert is best served chilled and consumed within 1-2 days for freshness.
- The leftover compote can also be used as a topping for pancakes, yogurt, or ice cream.
