Ingredients
Fruit
- 3 cups blueberries (fresh berries frozen for 2 hours on a sheet pan, or store-bought frozen)
Sweeteners and Liquids
- 4 to 5 tablespoons maple syrup or honey
- 3 to 5 tablespoons water
- 2 tablespoons lemon juice
Optional
- 1/4 teaspoon lemon zest (optional)
Instructions
- Freeze the blueberries: If using fresh blueberries, spread them in a single layer on a sheet pan and freeze for 2 hours to firm up. If using store-bought frozen blueberries, you can skip this step as they are ready to use.
- Blend the sorbet: Place the frozen blueberries, maple syrup or honey, water, lemon juice, and lemon zest (if using) into a food processor. Blend for several minutes, stopping occasionally to scrape down the sides. Add additional water or maple syrup as needed to achieve a smooth, creamy consistency. This process may take several minutes as the mixture transforms from crumbly to sorbet-like.
- Serve: Enjoy the sorbet immediately for a soft-serve texture or transfer it to a freezer-safe container and freeze for 1 to 2 hours if a firmer, scoopable consistency is desired.
- Storage: This sorbet is best enjoyed fresh and does not store well for extended periods. If storing, keep in a freezer-safe container for up to 1 to 2 days and allow to sit at room temperature for about 10 minutes before scooping.
Notes
- Use frozen blueberries for best texture and ease of blending.
- Adjust the sweetness by adding more maple syrup or honey based on your taste.
- Adding lemon zest enhances the bright, citrus flavor but is optional.
- Best served fresh as the texture can deteriorate if stored too long.
- Let softened sorbet sit a few minutes at room temperature before scooping to make serving easier.
