Ingredients
Brownie Batter
- 200g butter
- 1 cup brown sugar (200g)
- ½ cup cocoa powder
- 2 eggs
- 1 cup self-raising flour (150g)
Decoration
- 500g readymade custard
- 250g thickened cream
- 2 Tbsp caramel sauce
- Icing sugar for dusting
- Fresh berries (such as strawberries, blueberries, raspberries)
Instructions
- Preheat Oven: Preheat the oven to 170°C fan bake to ensure an even cooking temperature for the brownies.
- Melt and Combine: Melt the butter in a large saucepan over low heat. Add the brown sugar and cocoa powder, stirring continuously until fully melted and combined into a smooth mixture.
- Add Eggs and Flour: Remove the pan from heat and allow the mixture to cool slightly for a few minutes. Whisk in the eggs one at a time, ensuring each is fully incorporated before adding the next. Then sift the self-raising flour over the mixture and gently fold it in until just combined, taking care not to overmix.
- Prepare Muffin Tin: Grease a 12-hole muffin tin to prevent sticking. Evenly divide the brownie batter between the holes, filling each about three-quarters full.
- Bake Brownies: Bake the brownies for approximately 15 minutes until they are just cooked in the center. Remove from the oven and allow them to cool completely in the tin to firm up.
- Arrange Brownies: Once cool, carefully remove each brownie from the tin and arrange them in a circle on a large serving platter, forming a festive wreath shape.
- Decorate Wreath: Decorate the brownie wreath by placing dollops of readymade custard and thickened cream over and around the brownies. Drizzle caramel sauce artistically atop. Garnish generously with fresh berries of your choice. Finally, dust the entire wreath lightly with icing sugar for a beautiful finishing touch. Serve immediately to enjoy the fresh textures and flavors.
Notes
- Ensure the brownie batter is not too hot before adding eggs to avoid cooking them prematurely.
- Use fresh berries for the best taste and appearance; seasonal varieties work well.
- You can substitute self-raising flour with all-purpose flour and 1.5 tsp baking powder if needed.
- For extra fudgy brownies, slightly reduce flour by 1-2 tbsp.
- Serve the wreath immediately after decorating to keep the cream and berries fresh.
- Store any leftover brownies separate from toppings in an airtight container at room temperature for up to 2 days.
