These Buffalo Chicken Sliders are a perfect crowd-pleaser, combining shredded rotisserie chicken tossed in spicy buffalo sauce and creamy ranch dressing, layered with Monterey Jack cheese on soft King's Hawaiian rolls. Baked to melty perfection and brushed with seasoned butter, these sliders deliver bold flavors and a delightful mix of spicy, tangy, and savory in every bite, ideal for game day or casual gatherings.

  • Total Time: 25 minutes
  • Yield: 24 sliders

Ingredients

Chicken Mixture

  • 1 rotisserie chicken, shredded (about 3-4 cups shredded chicken)
  • ½ cup buffalo wing sauce
  • ½ cup ranch dressing
  • 1 teaspoon cajun seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Sliders

  • 2 packages King's Hawaiian rolls (12 count each)
  • 8 ounces shredded Monterey Jack cheese
  • 3 tablespoons unsalted butter, melted
  • ½ teaspoon Italian seasoning

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350°F (175°C). Lightly spray a large baking dish or rimmed baking sheet with cooking spray and set it aside to prevent sticking.
  2. Mix chicken filling: In a medium bowl, combine the shredded rotisserie chicken with buffalo wing sauce, ranch dressing, Cajun seasoning, salt, and pepper. Mix thoroughly until all ingredients are well incorporated and the chicken is evenly coated.
  3. Slice rolls: Without separating the rolls, use a large serrated knife to slice the entire package of King's Hawaiian rolls in half horizontally, similar to slicing a bagel, keeping the tops and bottoms intact as layers.
  4. Assemble sliders: Place the bottom halves of the sliced rolls cut side up inside the prepared baking pan. Sprinkle half of the shredded Monterey Jack cheese evenly over the bottom rolls. Spread the buffalo chicken mixture evenly over the cheese layer, then top with the remaining cheese. Finally, place the top halves of the rolls on top of the assembled filling.
  5. Prepare butter topping: In a small bowl, mix the melted unsalted butter with Italian seasoning. Use a pastry brush to generously brush this butter mixture over the tops of the slider buns to ensure a flavorful, golden crust.
  6. Bake sliders: Bake in the preheated oven for 10-15 minutes, or until the cheese is fully melted and the tops of the rolls are slightly browned and crispy.
  7. Serve: Remove from oven and let cool slightly. Optionally, serve with coleslaw either on top of the sliders or as a side dish to add a refreshing crunch contrast.

Notes

  • Use leftover rotisserie chicken for convenience and great flavor, but you can shred and cook your own chicken breasts if preferred.
  • The buffalo sauce and ranch dressing amount can be adjusted to taste depending on desired spiciness and creaminess.
  • For extra heat, add a pinch of cayenne pepper or use a spicy buffalo wing sauce variation.
  • These sliders can be assembled ahead of time and refrigerated, then baked just before serving.
  • Serve with additional ranch or blue cheese dressing for dipping if desired.
