A fresh and vibrant Butter Lettuce Salad featuring crisp snap peas, peppery radishes, and creamy goat cheese, all tossed in a light Champagne vinaigrette. This easy-to-make salad is perfect as a light lunch or a colorful side dish for any meal.

  • Total Time: 15 minutes
  • Yield: 6 servings

Ingredients

Salad Greens

  • 1 head butter lettuce (clamshell package)
  • 5 ounces baby lettuce blend or little gems (such as Organic Girl Little Gems)

Vegetables

  • 1 cup stringless sugar snap peas, sliced crosswise on a slight diagonal into about ½-inch pieces
  • 6 to 8 radishes, very thinly sliced

Dressings and Toppings

  • 4 ounces goat cheese or feta cheese, crumbled and divided
  • ¾ cup Champagne vinaigrette
  • 1 to 2 tablespoons chopped fresh chives or dill
  • Freshly ground black pepper, optional and to taste

Instructions

  1. Prepare the Lettuce: Trim the root ball from the butter lettuce. Tear the leaves into bite-sized pieces and rinse them thoroughly. Use a salad spinner to spin dry the leaves. Also, tear the little gems or baby lettuce blend into bite-size pieces. Place both types of greens in a large, shallow serving bowl or on a large platter.
  2. Add Vegetables and Cheese: Mix in the sliced sugar snap peas and thinly sliced radishes. Add about half of the crumbled goat cheese or feta cheese to the salad. If preparing ahead of time, cover the bowl and refrigerate until you are ready to serve.
  3. Dress and Garnish: Just before serving, drizzle the Champagne vinaigrette over the salad and gently toss to evenly coat all ingredients. Sprinkle the remaining crumbled cheese, fresh chopped chives or dill, and season with freshly ground black pepper if desired. Serve immediately for best freshness and flavor.

Notes

  • For a vegetarian-friendly version, use goat cheese or feta, which are typically vegetarian.
  • This salad is best served fresh but can be prepared a few hours ahead if kept refrigerated before dressing.
  • To make the salad vegan, substitute the cheese with a plant-based alternative or omit entirely.
  • Snap peas can be substituted with snow peas or green beans for variation.
  • Adjust the amount of vinaigrette to your taste preference, adding more or less as desired.
  • Use fresh herbs like dill or chives to enhance the salad’s flavor profile.
