Butter Swim Biscuits are classic buttermilk biscuits baked covered in butter, resulting in a crispy crust with a soft, fluffy interior. These biscuits are easy to prepare and perfect for a comforting breakfast or side dish.

  • Total Time: 43 minutes
  • Yield: 9 biscuits

Ingredients

Dry Ingredients

  • 2 ½ cups (312.5 g) all-purpose flour
  • 4 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 2 teaspoons kosher salt

Wet Ingredients

  • 2 cups (490 g) buttermilk
  • ½ cup (1 stick / 113 g) unsalted butter, melted

Instructions

  1. Preheat the oven: Set your oven to 450°F (232°C) to ensure it reaches the perfect temperature for baking the biscuits.
  2. Mix dry ingredients: In a medium mixing bowl, combine the all-purpose flour, baking powder, granulated sugar, and kosher salt. Use a whisk to sift and blend these ingredients thoroughly for an even texture.
  3. Add buttermilk: Pour in the buttermilk and stir gently until the batter is mostly combined. Be careful not to overmix, as this can make the biscuits tough.
  4. Prepare the baking dish: Pour the melted unsalted butter into an 8×8-inch (2-quart) baking dish, coating the bottom evenly.
  5. Shape the dough: Spoon the biscuit dough directly on top of the melted butter in the baking dish. Use a spatula or your hands to spread the dough evenly to the edges of the pan.
  6. Cut into squares: Before baking, cut the dough into 9 equal squares in a 3 by 3 pattern to create individual biscuits that will bake evenly.
  7. Bake: Place the baking dish in the preheated oven and bake for 28 minutes or until the tops of the biscuits turn a beautiful golden brown.
  8. Rest and serve: Allow the biscuits to absorb the melted butter for a few minutes after baking before cutting through the butter and serving. This results in extra moist and flavorful biscuits.

Notes

  • Do not overmix the batter to keep biscuits light and tender.
  • Using kosher salt enhances the flavor without making the biscuits too salty.
  • Baking in a butter-coated dish creates a deliciously crispy crust.
  • Allowing biscuits to soak in butter after baking enriches their moistness and taste.
  • For a different flavor, you can add herbs like chives or thyme to the dough.
  • If you lack buttermilk, you can substitute with milk plus 1 tablespoon vinegar or lemon juice, left to sit for 5 minutes.
