This Buttermilk Bread recipe creates a soft American farmhouse-style loaf that is tender, slightly sweetened with maple syrup, and perfect for sandwiches or toast. The dough is enriched with buttermilk and butter, resulting in a moist crumb and golden crust, making it a comforting homemade classic bread.

  • Total Time: 2 hours 40 minutes
  • Yield: 2 loaves

Ingredients

Wet Ingredients

  • 2 cups buttermilk
  • ½ cup unsalted butter
  • ½ cup maple syrup

Dry Ingredients

  • ½ teaspoon baking soda
  • 2½ teaspoons yeast
  • 2 teaspoons salt
  • 5½ cups bread flour, divided

Instructions

  1. Heat buttermilk and butter: In a large saucepan over medium-low heat, bring buttermilk and butter to a low simmer, allowing the butter to just begin melting. Remove from heat, stir in maple syrup, and set aside to cool until lukewarm.
  2. Mix dry ingredients: In a large mixing bowl, whisk together 3 cups of bread flour, baking soda, yeast, and salt to combine evenly.
  3. Combine wet and dry mixtures: When the buttermilk mixture is lukewarm, add it to the dry ingredients. Using an electric hand mixer with dough hooks, mix until the flour is fully incorporated.
  4. Add remaining flour and knead: Gradually add 2 cups of flour into the dough, reserving the last ½ cup for hand kneading. Turn the dough onto a floured surface and knead with the remaining flour until it becomes smooth and no longer sticky.
  5. First rise: Place the dough in a well-greased bowl, cover with plastic wrap, and let it rise for 1½ hours, or until it has doubled in size.
  6. Shape loaves and second rise: Remove dough from bowl, divide in half, and shape into two equal-sized loaves. Place them into prepared loaf pans, cover loosely with a cotton towel, and let rise for 30-40 minutes until the bread rises above the pans.
  7. Bake: Preheat oven to 375°F (190°C). Bake the loaves for 30-35 minutes until golden brown and the bread sounds hollow when tapped.
  8. Cool: Remove the bread from the oven, cool on a wire rack for 10 minutes, then remove from pans and let cool completely before storing in an airtight bag.

Notes

  • This recipe yields two loaves of soft, sweetened buttermilk bread.
  • Use fresh yeast for best rising results.
  • Allow dough to cool properly before shaping to ensure better texture.
  • Store bread in an airtight bag to maintain freshness up to 3 days.
