A flavorful and creamy Cajun Chicken Pasta featuring tender chicken, colorful bell peppers, and a rich cream cheese sauce with Cajun spices. Ready in just 25 minutes, this easy skillet dish combines sautéed vegetables, a smooth blended sauce, and perfectly cooked bow tie pasta for a delicious weeknight meal.

  • Total Time: 25 minutes
  • Yield: 4 servings

Ingredients

Pasta and Chicken

  • 8 oz bow tie pasta (cooked according to package instructions)
  • 2-3 cups cooked chicken (rotisserie chicken recommended)

Vegetables

  • 1 1/2 cups chopped bell peppers (red, orange, and yellow preferred)

Sauce

  • 1/2 cup milk
  • 1 tablespoon all-purpose flour
  • 3 ounces cream cheese (light or regular)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon paprika
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon chili powder
  • 1 cup chicken broth

Optional Garnish

  • Parmesan cheese
  • Chopped fresh parsley

Instructions

  1. Prepare Ingredients: Set aside the cooked bow tie pasta. Chop or shred the cooked chicken, preferably rotisserie chicken for best flavor. Chop the bell peppers into bite-sized pieces.
  2. Sauté Peppers: Spray a large skillet with nonstick cooking spray or heat about 1/2 tablespoon of oil over medium heat. Add the chopped bell peppers and sauté until soft, about 3 to 4 minutes.
  3. Make the Cream Sauce: While the peppers cook, place milk, all-purpose flour, cream cheese, salt, black pepper, paprika, garlic powder, onion powder, and chili powder into a blender. Blend until completely combined and smooth.
  4. Combine Chicken and Sauce: Add the cooked chicken to the softened peppers in the skillet. Reduce heat to low and pour in the blended cream sauce. Stir gently and allow it to thicken for about 1 minute.
  5. Add Broth and Pasta: Pour in the chicken broth and stir well to blend all ingredients. Add in the cooked pasta and stir to combine. Let the pasta simmer on low heat for 1 to 2 minutes until heated through and flavors meld.
  6. Garnish and Serve: Remove from heat. Optionally garnish with grated Parmesan cheese and chopped fresh parsley. Serve immediately and enjoy your creamy Cajun Chicken Pasta.

Notes

  • Using rotisserie chicken saves time and adds extra flavor.
  • You can adjust the amount of chili powder to increase or decrease spiciness.
  • Light cream cheese works well and reduces fat content.
  • Be sure to cook pasta according to package instructions to avoid overcooking before adding to sauce.
  • Chicken broth adds depth to the sauce but can be substituted with vegetable broth for a different flavor profile.
