Chicken
- 500 grams Boneless Chicken Breast, cut into small pieces
- 2 tablespoons Butter
- 2.5 tablespoons Cajun Seasoning (see notes 1 & 2)

- 1 teaspoon Fresh Lemon Juice
Vegetables
- 1 medium Zucchini, cut into chunks
- 1 Red Bell Pepper, sliced or chopped
- 1 Yellow Bell Pepper, sliced or chopped
Instructions
- Melt butter: Heat a skillet over medium heat and add the butter, allowing it to melt completely and coat the pan evenly.
- Add Cajun seasoning: Sprinkle the Cajun seasoning into the melted butter and toss for about 10 seconds to release its aroma and flavors.
- Cook chicken: Add the cubed boneless chicken breast pieces to the skillet, tossing well with the butter and seasoning mixture. Cook for 5 minutes, stirring occasionally, until the chicken starts to brown and is mostly cooked through.
- Add vegetables: Introduce the zucchini chunks and the red and yellow bell peppers to the skillet. Mix everything thoroughly and cook for another 2-3 minutes, allowing the vegetables to become tender yet retain some crunch.
- Season with salt: Add salt according to taste. If your Cajun seasoning already contains salt, adjust accordingly to avoid over-salting.
- Check doneness: Ensure the chicken is fully cooked through and the vegetables remain crisp but tender.
- Finish with lemon juice: Turn off the heat and drizzle fresh lemon juice over the skillet. Toss gently to combine and brighten the flavors.
- Serve: Serve the Cajun chicken and vegetables hot alongside steamed rice or your preferred side dish for a wholesome meal.

- If using store-bought Cajun seasoning with salt, reduce or omit the extra salt to prevent the dish from becoming too salty.
