Cajun Shrimp Deviled Eggs are a flavorful and spicy twist on classic deviled eggs, featuring Creole seasoning, hot sauce, and sautéed shrimp. Perfectly balanced with a touch of sugar and jalapenos, these deviled eggs make an excellent party appetizer or snack that jazzes up boring eggs with bold Southern flavors.

  • Total Time: 32 minutes
  • Yield: 20 deviled eggs

Ingredients

Eggs & Filling

  • 10 eggs
  • ½ cup mayonnaise
  • 1 Tablespoon dijon mustard
  • 1 teaspoon hot sauce
  • 1 Tablespoon Cajun seasoning plus 1 teaspoon
  • ¼ teaspoon granulated sugar (optional)

Shrimp & Toppings

  • 20 medium shrimp, peeled and deveined
  • 2 Tablespoons olive oil
  • 1 jalapeno, thinly sliced
  • fresh chives for garnish
  • lemon slices for garnish

Instructions

  1. Cook the Eggs: Place 10 eggs in a large saucepan in a single layer and cover with 1 inch of water. Bring to a boil, then remove from heat, cover, and let stand for 12 minutes. Drain and cool the eggs under cold running water until they are cool enough to handle or add ice cubes for quicker cooling.
  2. Prepare the Filling: Peel the cooled eggs and halve them lengthwise. Remove the yolks and place them in a mixing bowl. Break up the yolks with a fork, then add ½ cup mayonnaise, 1 tablespoon dijon mustard, 1 teaspoon hot sauce, ¼ teaspoon granulated sugar (optional), and 1 teaspoon Cajun seasoning. Mix until smooth and chill the filling.
  3. Cook the Shrimp: Season 20 medium shrimp with 1 tablespoon Cajun seasoning. Heat 2 tablespoons olive oil in a cast iron or heavy-bottomed skillet over medium-high heat. Arrange shrimp in a single layer and cook for 2 minutes on one side. Flip and cook another 2 minutes until shrimp are opaque and cooked through. Remove shrimp to a plate to stop cooking.
  4. Assemble the Deviled Eggs: Using a pastry bag fitted with a large tip, pipe the chilled yolk mixture into the egg white halves. Top each deviled egg with a cooked shrimp, a thin slice of jalapeno, and garnish with fresh chives. Serve immediately with lemon wedges or chill for up to 2 hours before serving.

Notes

  • Instead of a pastry bag, use a resealable plastic bag with a corner snipped off or simply spoon the filling into the egg whites.
  • Add extra diced jalapenos to the yolk mixture for spicier deviled eggs.
  • The ¼ teaspoon granulated sugar is optional but helps balance the spicy filling.
  • Use 1 teaspoon Cajun seasoning in the filling and 1 tablespoon for seasoning the shrimp.
  • Make ahead tips: Boil eggs and prepare filling up to 2 days ahead—store separately in airtight containers in the fridge. Cook shrimp and assemble deviled eggs up to 2 hours before serving.
