  • 3 tablespoons frozen apple juice concentrate, thawed, divided
  • 3 tablespoons unsalted butter
  • 1/4 cup 35% whipping cream
  • 1/8 teaspoon cinnamon

Optional Topping:

  • Candied pecans or other nuts

Instructions

  1. Prepare Caramel Sauce: Although step 1 is a heading, the caramel sauce is created later. Follow steps 9-10 to make the sauce.
  2. Preheat Oven: Heat oven to 350°F (175°C) to prepare for baking the cheesecake.
  3. Prepare Springform Pan: Wrap a 6-inch springform pan with a double layer of aluminum foil along the bottom and sides, extending above the top edges to prevent water from leaking into the pan during the water bath.
  4. Make Crust: In a small bowl, combine graham cracker crumbs, melted butter, and cinnamon until coarse crumbs form. Press this mixture evenly into the bottom of the wrapped springform pan. Bake for 10 minutes, then cool. Place the prepared pan inside a shallow roasting pan.

  10. Finish Caramel Sauce: Remove from heat and add butter—mixture will bubble and foam. Stir until smooth, then whisk in whipping cream, remaining apple juice concentrate, and cinnamon. Cool the sauce and refrigerate until chilled.
  11. Assemble the Dessert: Carefully remove the chilled cheesecake from the springform pan bottom. Drizzle with the cold caramel sauce and sprinkle with optional candied pecans or nuts. Serve and enjoy!
