Instructions
- Prepare crust: Preheat oven to 350°F. On a lightly floured surface, roll dough to a 1/8-inch-thick circle; transfer to a 9-inch deep-dish pie plate. Trim crust to 1/2 inch beyond rim of plate; flute edge. Refrigerate while preparing filling.
- Mix filling: In a large bowl, toss sliced apples with lemon juice and vanilla extract. In a separate small bowl, combine chopped pecans, brown sugar, sugar, ground cinnamon, and cornstarch. Add this mixture to the apples and toss to combine evenly.
- Assemble pie: Spread 1/4 cup caramel topping evenly onto the bottom of the prepared pie crust. Pour apple mixture into the crust and drizzle with melted butter.
- Make streusel topping: In a bowl, mix all-purpose flour and sugar. Cut in cold cubed butter until mixture is crumbly. Stir in chopped pecans. Sprinkle this streusel evenly over the apple filling.
- Bake pie: Place pie on a lower oven rack and bake at 350°F for 65 to 75 minutes or until the filling is bubbly and crust is golden brown.
- Finish and serve: Remove pie from oven and drizzle with additional caramel topping. Cool on a wire rack until room temperature. If desired, serve with whipped cream and extra caramel topping for added indulgence.
